You have given me the inspiration to try again with latte art. I have to admit that I'm hopeless when it comes to doing this. I usually tell people to close their eyes and enjoy the taste of the coffee that I make them. As a friend once said to me while looking into a vaguely cloud shaped pattern in his coffee, I'm probably closer to being autistic than artistic.

I did it..... I fixed my 20 years old flat burr grinder and performed a Bypass Surgery on my nostalgic Jura Subito unique espresso machine (model 2000-2005 which was also known by the alias Capresso Ultima, and Delonghi Something...), knowing that if it doesn't work my only option is to get the Breville Barista Pro (maybe that drove me harder to get the task done). Not saying (yet) that the Jura Subito is superior to the Barista Pro, but I am sure gonna try to prove that. No doubt the Jura Subito is an underdog (with somewhat damaged arteries), but it sure has some nice features up his sleeve to try to level the score against the mighty Barista. Worked 8 hours on the grinder and the heart-damaged espresso machine, weighed 19 grams of whatever Lavazza beans I could find, grinded them coarser (first shot), leveled the puck, tamped it.... and BOOM... crazy ass crema espresso was showing (after almost 10 years of not using my equipment). I was so hypnotized by the crema I lost my count and the shot became over-extracted and bitter. Also found out I used the pressurized option of the machine since this machine has a cylinder + piston instead of a standard porta filter, but its a different story to be told in a different lance-comment-hitchhiking-blog :)

Only 10 minutes ago I finally got a glimpse of my perfect Latte after many attempts. I will probably make you pee in you pence if you hear how I got to get the espresso shot for this latte. Stacked 19 grams of finely grounded light roasted Kenya in a 45mm cylinder and pressed it as hard as I could with the built-in piston. This created so much pressure on the coffee, since as thin and deep the cylinder (= porta filter) the coffee resistance is harder and requires much bigger pressure for water coming through. So the perfect espresso shot for my latte is actually taking not 25 seconds but about 2-3 minutes, when you can actually count the number of drops coming down to the latte cup. The espresso layer that accumulated between the warm milk and the foamed milk was of about 4 millimeter (way less than even 1:1 extraction). Unbelievably, the espresso shot is not burned and the latte is extremely flavorefull (not yet as I want it to be, but I'm getting there). What do you think? Am I a crazy person burning his coffee/espresso and thinking its delicious??? I wouldn't change it even if you say I am..... :)

Not at all! Sounds like a ristretto style shot, which I'm not surprised tastes good. With such a deep puck, likely quite underextracted, but that tastes really good with milk! Probably undrinkable on its own haha

Boom.... I found the sweet spot. Finally grounded light roasted Kenya with a hint of Brazil (cause I ran out of Brazil that moment) dripped as a strong Ristretto (Ristretto ++) on a warm steamed milk...... Wow... just wow... I am in heaven... Can it get better than this? And this is with a ~20 years old Machine + Grinder.

Hey Lance! You should change your concrete analogy to hour 1, hour 2, etc... it hardens quite fast (relatively speaking). It does take many days to fully cure, but it's hard enough to stand on after a few hours.
