This sounds delicious! I don't have a ricer, so I would just dice the potatoes. Peas and carrots would add a little color. Your addition of ham is perfect. Maybe a little more cheese? Thanks for sharing!

I usually make a smoked ham hock and onion broth in my pressure cooker as my base for potato soup.

That's a great idea Kitchen Fairy! Come Easter time I'll save my ham bone, and also save up the cut ends of onions in order to try your method! I bet I could make it in the slow cooker too, I often keep the slow cooker on all day and overnight. I love using up food scraps!

Thanks for sharing this inspiring recipe! I have all the ingredients on hand but my potatoes are fresh so I'll just use those. I used to watch Alton all the time on 'Good Eats' a great show.

Ah! Thanks for posting this! I have leftover buttermilk I don’t want to throw out, but I need to cook the potatoes, buy leeks, sour cream and a ricer (my antique one moved in with my daughter). I also watched Alton’s video - I miss cooking shows.

Love this idea. It’s a soup version of a savoury muffin I often make. It starts with left over potato. I do as you suggested and tweak it to use up other leftover vege like carrots, onions, peas. Leftover meats like ham or roast beef diced small. Or bacon. Perhaps cheese. Great to freeze. Best warmed to eat. Always make the biggest size. Handy for lunches when things are hectic.

Oh, that looks absolutely WONDERFUL! We are getting ready for a major storm, hoping it will miss us in N.Central Kentucky. When I first got here in 1994, we were really socked with one. We've had a few since, although rarely. We are overdue for an ice storms, which can stay away forever if it were up to me!

Hello from Harrodsburg, KY. 1994 was mild compared to the winter of 1978. It was my senior year of high school and we missed about 1 full month of school because of snow and ice. The school buses just can’t travel all these rural, windy backroads that we have here in KY but even in town most of the streets were not safe to drive on. To make up the missed days we had to start classes earlier in the morning and stay later in the afternoon. There was discussion of going to school on Saturdays but thankfully that did not happen. I can deal with snow but I’m with you on the ice storms, they can stay away! Stay safe.

@connieb6841 Granted! I was where I grew up in the Washington DC suburbs and 1978 was probably the worst storm I ever saw there. We had a blizzard in 1966, and a lot of multi inch snows in 1962, but '78 was something else. I'm in Bardstown, and also wish you well.

Looks good! My favorite potato soup is using leftover scallop potatoes. Put a scoop of scallop potatoes in a bowl and add milk. Heat and enjoy. Happy new year! Always enjoy your videos

Happy New Year to you both. Firstly, I would like to say a big thank you for doing the Lord's work. I must say that I have been watching your videos for quite some time, and I can't thank you enough for the amount of accurate information that you have provided, especially for emergency preparedness. Secondly, I do have a question regarding if you have an ingredient item redundancy plan. Do you have a plan for substitutions when or if times do not allow us to have access to certain ingredients, for example, flour? Do you have backup recipes on hand to utilize other ingredients, and have you tried those recipes to ensure that you enjoy them?

No ricer? If you don't mind getting your hands messy, the potatoes could be peeled and shredded. Or, coarsely mashed. I haven't ever used buttermilk in 'tater soup, but I sure will try it. Could be a good use for dehydrated buttermilk? Sounds so good and simple, especially after the rich foods we've indulged in over the holidays. With all that chicken broth, it could be called creamed chicken soup with potato...lol. Nice and healthful to fight the colds we all seem to get after the Great Holiday Germ Exchange. I really wish Christmas could come in the summer, with sunshine and fresh air...just sayin'. That said: May we all have a prosperous and healthy year.

A recipe for soup how novel. I use white pepper in soup so it stays suspended. Black pepper sinks, just like a Bumble.

What is the difference between White Pepper & Black Pepper besides the color?

Flavor. Its smaller grind, too. Its also a different pepper corn. Popular in chinese cooking and any white sauce you dont want to see black pepper.

To my understanding 'white pepper' is made from ripe pepper corns which are fully ripe. And 'black pepper' is made from unripe pepper corns. Each have a different flavor, and both flavors I like.

White pepper seems to have a gentler warming flavor. I like to layer it with a little cayenne and some ginger to get a medium spicy flavor with depth.

What is this 'left over baked potato'...I only cook for me so cook what I need so I would cook the potatoes specifically for this dish. What you used we (Australians) call jacket potatoes, baked potatoes are ones that are cut up and baked in fat in the oven.

You made one mistake. NEVER NEVER measure dairy products ( like the sout cream) always guess generously. Every recipe will taste a bit richer and much better. It's OK to watch dairy consumption most of the time but in this instance splurge a bit and savor every spoonful.
