Lately I really wanna eat crispy cream puff, so I made this (:
Because of lemon curd, this lemon cream is quite heavy flavor.
So if you don’t like heavy flavor, you can fill whipping cream and lemon curd separately for regulate ratio!

*cookie choux
70g(5Tbsp) unsalted butter
70g(1/3cup) white sugar
70g(1/2cup) pastry flour
*cream puff
45g(3Tbsp plus 1tsp) unsalted butter
60g(1/4cup) milk
60g(1/4cup) water
2g(1/4tsp) salt
5g(1tsp) white sugar
70g(1/2cup) pastry flour
2 eggs
*lemon curd
1 1/2 lemon zest
110g(1/2cup plus 2tsp) white sugar
2 eggs
80g(1/2cup plus 2tsp) lemon juice
150g(1/3cup) unsalted butter
*lemon cream
100g(1/3cup plus 1Tbsp) heavy cream
10g(2tsp) white sugar
80g(3oz or 1/3cup) lemon curd
180C/F 25~35
