Lemon Garlic & Rosemary Roasted Chicken Recipe

Had my parents over tonight and made it for the whole family. Had so many people that I made two 4.5 pound chickens. To say they liked it would be a gross understatement. Everyone LOVED it! The meat was so tender and juicy. The flavors were perfect, too. Nothing was overpowering, but you could taste the lemon, garlic, and rosemary. Being the first time that I made it (and I made two chickens), the prep time was a bit longer, but I'm sure once I've done it another time or two, it won't take any time at all. I made mashed potatoes and gravy, as well as a spinach salad with strawberries, blueberries, and sliced almonds with a homemade sesame seed vinaigrette. We picked the two chickens completely clean. It isn't often that the meat is going before the potatoes, but that was the case tonight.

For all of the people who think the butter would make this to greasy, please try before you critique it. Butter also is what makes the chicken skin turn out so crispy and golden brown. Butter is a natural fat your body can use and then lose what it doesn't need instead of turning into belly fat. I would add more garlic but she even said she would too in the video. Also rub butter under skin and cut celery, onion and carrots into large pieces to go under chicken to keep it out of the drippings while it roasts and also adds even more flavor. Great video on a wonderful recipe!!!

This is a fantastic recipe. I cooked up a 6-pounder and made the necessary adjustments to ingredients and cooking time. It turned out amazing. I was served to three people with two other sides. Every bite was so juicy that we were surprised when we realized that we had finished the whole chicken between three people!!

OMGGGGGGGG, I made this recipe but instead with chicken thighs and let me tell youuuuuuuuu. It was amazing! And I don't usually like lemon-peppery chicken but sis, this was great. The lemon zest wasn't overpowering at all. It was super juicy. It was great. Give it try, you won't regret it!

This is my FAVORITE roasted chicken recipe! I have made roasted chicken before and they had absolutely no flavor whatsoever but this recipe.....? I was up to midnight smacking on this! The use of lemon zest in the rosemary garlic butter mixture gave the chicken life, not to mention the generous use of salt and pepper which the chicken could handle as you said. I cannot wait to try more of your recipes!

Love this video. I'm going to try this recipe. When I bake chicken I always put a little water at the bottom of the pan. I see you didn't do that. I always think the chicken will dry out and burn at the bottom. Please share advice on weather or not it is necessary to add water. Thanks.

Yummy! I love your videos, they make my mouth water! I did it a little different by adding the lemon, butter and rosemary, thyme and sage, (I love using herbs) to a cup of chic broth and baste it like a turkey, that is yummy too, you have some great ideas on how to season and cook!
