I have GOT to stop watching your videos while I'm hungry! My wife and I just made your Italian meatballs recipe a couple days ago (because I was hungry when I watched that video). We still have multiple containers left as left overs! We are going to make another batch or two of that and freeze for easy future meals. Now I have to make this recipe tonight. We will be eating well all weekend! Thank you both for taking your time to bring great recipes.

Following up to my earlier post. You are not kidding when you call this recipe "The Best Lemon Rosemary Chicken"! Wow! 10/10! Next time I will sauté some spinach to go along with it as potatoes are enough starch for me. (I just kept it to meat and potatoes tonight, LOLOL yummyyyyy!!!)

My wife invited another couple over for dinner last night. I had no clue what to make so as my go to...I went on your channel for motivation. Don’t forget to serve the chicken and the potatoes with the delicious sauce that it’s cooked in! :) As I said, some pans can really absorb that sauce. But stainless steel or glass pans will preserve it so you have lots to serve alongside the chicken and potatoes. Cheers!

I made this tonight and it was crazy-delicious! The only issue I had was that by the time it was done, I didn’t have a a lot of sauce left. I think maybe it was because I had more potatoes than the recipe called for. Maybe they absorbed some of the sauce. Either way, this is one of my new favorite dishes. SO good! Thank you 💜

I sure did enjoy it, Bethany! The sauce issue could have been any number of things. I used a ceramic pan, so maybe I’ll try a glass or metal pan next time. OR I could multiply the sauce ingredients by one and a half. You can never have too much sauce, if you ask me. Lol. But seriously…what a great recipe! Simple and delicious.

Bethany, this looks great! You have a gift for presenting your recipes in a way that is easy to follow and understand even for an older guy like me. And I LOVE having printed recipes at my fingertips! I think your lemon sauce is very versatile, even with fish, and your asparagus recipe would go perfectly with this dish. We grow both rosemary and basil here in the Arizona desert and they are my two favorite herbs. Looking forward to citrus season this winter!

I was looking for a chicken thigh recipe today and there you were in my feed! In the oven now and smells absolutely Devine!! Clean up of prep was a breeze. I had *everything* I needed on hand. I actually made this recipe a long time ago! I am a fan of lemon and dinners. My husband is not 🫠 but when he tried this it was the perfect amount of lemon where he didn’t complain for once lol 😆 your presentation with food is always amazing and I can never match it which I hate chu for LOL 😂 I wanna make this again and hopefully match it exactly 👍

That dish looks delicious Bethany. I wish I could reach into the screen and try it. You did not add the Canadian touch with the maple syrup, but you added the Greek touch with the honey. Greeks love to use honey, especially in their desserts. I love watching you cook Bethany. All of your dishes look delicious. Watching you cook makes me hungry.

Fantastic; love it! Zio Fifi would paprika the chicken and potatoes before adding the sauce (the honey and Dijon are critical). Then again he had a love affair with Paprika ( the spice, not the dancer :-) great and delicious and thanks for the video. Good health to all you good people!

My mom makes chicken wings in a skillet with olive oil, freshly squeezed lemon juice, garlic, paprika,blackpepper and salt. She slow cooks it until its golden, and a glaze forms. It's so amazingly delicious! She serves it over a bed of white rice that she cooked with finely diced onion.

Hi Bethany Well i made a comment the other day on this clip, but it seems to have disappeared, or i pressed the wrong button. Needless to say i made this recipe tonight, with my eldest daughter telling me her friend was coming to dinner, then dropping the fact she was vegetarian ahhh ! But i panicked not and a quick trip to the shop had a chicken substitute (we call Quorn in the UK) and a vegetable stock. Now the good thing about this dish is that its quite quick to prepare, so i made the two side by side with no problem. Well it all went really well and i just made a plain boiled rice to go with it, oh and crusty french bread. Now i kid you not Bethany, there was lots of oh's and rrs as it really hit the spot for every one. For desert i made a vegetarian suet Jam Rolly Polly with none dairy custard and that went down great also. Bethany I LOVE your recipes and never get any complaints (unless i don't follow your instructions). Chris (In UK) PS - Why do lemons and limes fight? Because they're BITTER rivals!

Maybe your favorite biscuit recipe too? hahah that's actually quite a clever joke!

@@Asimplepalate Hi Bethany so lovely to get your reply, In the UK at this time of year we love heavy comfort puddings, and Jam Roly Poly is one of them, this is the recipe i use. Ingredients 50g salted butter, cold and cut into chunks, plus extra for greasing 250g self-raising flour, plus extra for rolling 1 vanilla pod, seeds scraped out 50g shredded suet 150ml milk, plus a drop more if needed 100g/4oz raspberry or plum jam, or a mixture custard, to serve Method STEP 1 Put a deep roasting tin onto the bottom shelf of the oven, and make sure that there’s another shelf directly above it. Pull the roasting tin out on its shelf, fill two-thirds with boiling water from the kettle, then carefully slide it back in. Heat oven to 180C/160C fan/gas 4. Tear off a large sheet of foil and greaseproof paper (about 30 x 40cm). Sit the greaseproof on top of the foil and butter it. STEP 2 Tip butter, flour and vanilla seeds into a food processor; pulse until the butter has disappeared. Tip into a mixing bowl. Stir through the suet, pour in the milk and work together with a cutlery knife until you get a sticky dough. You may need a drop more milk, depending on your flour. STEP 3 Tip the dough out onto a floured surface, quickly pat together to smooth, then roll out to a square roughly 25 x 25cm. Spread the jam all over, leaving a gap along one edge, then roll up from the opposite edge. Pinch the jam-free edge into the dough where it meets, and pinch the ends roughly, too. Carefully lift onto the greased paper, join-side down (you might find a flat baking sheet helpful for this), loosely bring up the paper and foil around it, then scrunch together along the edges and ends to seal. The roly-poly will puff quite a bit during cooking so don’t wrap it tightly. Lift the parcel directly onto the rack above the tin and cook for 1 hr. STEP 4 Let the pudding sit for 5 mins before unwrapping, then carefully open the foil and paper, and thickly slice to serve. Pease use fresh Vanilla pods, not liquid. Chris. (In UK)

@@Asimplepalate Hi again Bethany I had a think re your Biscuit suggestion we like here, and my kids love Afghan Biscuits i make, i just use peanuts on top not Walnuts. The recipe is - 200g butter, at room temperature 100g granulated sugar ½ tsp vanilla 180g all-purpose flour 30g cocoa ½ tsp salt 70g cornflakes Chocolate Topping 30g unsalted butter, at room temperature 125g icing sugar, sifted 15g cocoa Pinch of salt 1 Tbsp Boiling water Walnut Halves Cook Mode Prevent your screen from going dark Instructions AFGHAN BISCUITS Preheat the oven to 350°f/180°c. Line two sheet pans with parchment paper. In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and sugar until light and fluffy. Add the vanilla and mix to incorporate. Add flour, cocoa, and salt, and mix until combined. Add the cornflakes and mix briefly to incorporate. Place 2 Tbsp scoops on the prepared baking sheets, leaving room for spreading. Gently roll each piece of dough into a ball and flatten slightly. Bake for 12-15 minutes, rotating pans half way through, or until the edges are set. Remove from oven, and allow to sit on the tray for 5-10 minutes. Move to an oven rack, and allow the biscuits to cool completely. CHOCOLATE TOPPING Combine butter, icing sugar and cocoa in a small mixing bowl. Add boiling water and mix until smooth (refrain from adding extra water until you have mixed well, or you get stuck in an icing sugar - water - icing sugar vortex) Spoon a small amount of the icing onto each biscuit, and place a walnut half on each one. Store in an airtight container in the fridge for a more 'fudgy' texture, or out at room temperature if you prefer them more crunchy! Chris (In UK)

Ahh yes I did a lot of research on countertops before I got mine. Mine are quartzite/real quartz. I love them so much and they do not etch or stain, love that it’s natural stone. I did have quartz countertops on an apartment but they were missing that beautiful marbling and I didn’t love that they weren’t heat resistant and made of percentage of glue😬

On the finished dish you poured some sauce over dish. If this was from leftover marinade not cooked with the dish , did you boil it first for safety reasons? I read to not use lemon based sauces in aluminum and cast iron to avoid a chemical reaction. This looks like a simple but detailed “ Greek Chicken and Potato “ recipe cooked in one pan. I like skin on chicken and I crisp the dish under the broiler for a couple of minutes. Thanks for your simple recipe.

Any cast iron pan I do use is enameled, which protects against acid interfering with the cast iron. And that sauce is from the finished dish that the chicken and potatoes are cooked in! Best part of the dish :)

Breasts typically take around 20ish minutes, so you could cook the sauce and the potatoes then maybe add the chicken? 😊
