Oh my, got a craving for thai beef salad at work today and thought Marion probably has a recipe for it. Found the recipe and luckily I had more or less all ingredients at home so that I could cook it right away after work. Hi Marion, rinsing the noodle immediately after cooking with cold water traditionally to get rid of the gluey, slimmy floury residues so the noodles won't have that sticky gluey floury taste when serve. Now a day, this method is used mostly prevent overcooking.

@@ellietrann I'm not sure about that...I mean, technically, "thit nuong" means BBQ'ed or grilled meat. It doesn't signify a specific type of protein, per se. But yeah, everyone associates it with the pork version as that's probably the protein used initially. My parents always just called our beef noodle bowl bun bo even though technically, it should include the word xao to signify it was stir-fried in a pan. My parents always made our bun bo with curry, though. :)

Try making stir fried rice vermicelli very similar in the method of making egg noodles stir fry in the philippines we call it bihon (rice vermicelli)

Soaking my vermicelli in cold water didn't work for me but I came up with another solution so they don't clump... However its very controversial... I cook the noodles then give a quick chop through with the scissors. Works really well!

AlphGen this is technically more of a Vietnamese style dish. But because I’m of Thai heritage I tend to use Thai fish sauce. The thing to look out for with fish sauce is the ingredient list. The fewer ingredients the better. The best ones only have fish (anchovy) , salt and water. The colour is just an age thing 😊

I love rice noodles- but sometimes I despair!- I cooked pad Thai noodles last week- followed the package instructions- which said to boil for 6-8 minutes before you stir fry them- I was sceptical- and I should have been- after 6 minutes they were already mush!😩🤷♀️😡

Missing sesame seeds and peanuts marinated in beef.Served with sautéed chopped scallions and fresh roasted pounded peanuts for a complete authentic Vietnamese dish. The noodles should be drained and completely dry before serving.
