I'm a 63 year old white woman from the North but mama was a southern woman. We grew up on wilted lettuce and cornbread. Deviled ham in a can with hard boiled eggs on bread. We were poor but that was good eating to us.

Whew! I saw this title and thought you were going to eat us all on a cracker! My poor mom 92-year-old had a fall and is in one of those facilities that helps you rehab. I can't stand her being there, so I'm showing up with good food and encouraging her to work hard with the physical therapist so we can just get her home. She is going to love this with a delicious little mixed fruit bowl that I'm cutting up for her with some of the best mangos (my son brought to me) I've ever tasted. Thanks girls! As a kid we lived in the country and my Mom had a huge garden that was a half acre. We always had fresh tomatoes, lettuce, corn, green onions, strawberries, cucumbers, green pepper, green beans, zucchini, and radishes, and potatoes. My favorite thing as a kid was radish sandwiches. Just butter bread and sliced radishes. We didn't know we were poor because we ate like kings from our garden. All the town kids I went to school with were soooo jealous of all the fresh vegetables I always had. And of course Mom canned everything for the winter too. It's funny how as a kid I didn't really realize how poor we were because Mom and Dad always made sure us kids had everything we needed. Maybe not everything we WANTED, but everything we needed. Bless you and thank you for your video. You really helped me reminisce about my childhood.❤️

What I realized growing up is that ungratefulness is learned… I took my lunch to school and thought nothing different... I liked the things my mom put in there… Just the basic sandwiches I was used to eating and vegetables with fruit for dessert or homemade cookies if I was really lucky. People would say things and ask me questions because most bought lunch at school. Pizza, hot dogs, chips whatever… I asked my mom why I take my lunch every day? (didn’t tell her why) and she told me she packs my lunch every day because she loves me. 😂 obviously I didn’t go to school and tell everyone what she said… I just remember feeling bad because I thought, “Well it does make sense… My mom does all of these things to make sure I have food to eat and other people just send their kids with money.” 🤔😂 Not entirely accurate but I felt so grateful for my mom’s love. 😭 A lot of love and creativity goes into keeping people fed with not much to go around. We learn to be unhappy and ungrateful for the food we are blessed with.

As a fellow southerner, I love seeing southern belles share food and their culture. It is a beautiful culture that so many people don't understand. Both black and white went beyond slavery and helped one another to survive. My grandmother would help and share with anyone in need. Both black and white neighbors all pitched in. They were true friends and neighbors. They loved God and practiced their faith. These relationships have endured four generations in my family. A proud SC Belle.

My grandma made this after a long morning in the garden. A garden that fed the family year around and the neighbors as well. We called it “ Grandma Nichols garden Surprise.”Some occasions she used cucumbers as well. We knew when we worked in the garden what we were coming to eat. We had a creek were we put the vegetables we were going to be using in while we worked the garden so the vegetables would be cold. And my Grandma always took seeds out of everything. Oh the memories. My Mama Ag...born in 1914, also cooked the greats for her family and strangers alike. Sunday night she made camp stew. Cream corn, stewed tomatoes, green beans and canned meat...and 3/4 of a bottle of ketchup. She took that soup and a loaf of light bread to the railroad tracks and fed the hobos at thr camp. I thank God for all my precious memories of her. You ladies are amazing and have that sweet spirit just like her. ❤❤Came for the recipe..stayed for the love. Subscriber forever❤❤

I’m from northwest Georgia. My Mammaw would make this salad with some bacon crumbs. They were so poor, but acted like they had millions. One of our family’s favorites she fixed was Mackerel Gravy with Cathead biscuits. Have you heard of that? 🎉

My grandmother only knew depression era meals and cooking. She made this salad with chopped broccoli florets because she believed broccoli was a nutritionally perfect food that cured everything. Even though she lived in abundance with my grandfather, she could never shed having come up in scarcity. If I could wave a magic wand it would be to make sure the children of the world are fed. @@Fuzzeej71oh my gosh! So one who knows what kilt lettuce is! I swear I do t come across many folks who know what kilt lettuce is and how good it is! I love that stuff! I grow me some loose leaf lettuce every year just so I can have some kilt lettuce ! I grew up in East Tennessee, Appalachian mountains. And that’s where my family is still living. My family always made it by washing the lettuce and adding some cut up up green onions. Fry some bacon and then the bacon grease to smoking and pour the grease ( to taste) over the lethice and onions. Make some mashed potatoes to have with this…..and I usually make a pork chop for my husband. And make some cornbread …Serve wirh some vinegar to drizzle over the lettuce , the mashed potatoes , the bacon and corn bread. My mouth is watering thinking about this.

Mashed potatoes with mustard, mayo, onion and pickle. Those we ate hot with kilt lettuce, and, there’s nothing better than that big ol plate of corn bread to suck up the juice. My granny Luke used to make crackers salad but just a little different than yours. Hers was just boiled eggs cut up ,2 sleves of saltine crackers crushed, tomato juice and mayonnaise. It was so simple but so delicious. When she passed away all of us grandkids were running around calling each other wanting to know who had the recipe lol. Along with her homemade chocolate pudding. Yes we’re from Georgia. South Georgia.

My goodness, this is good. It's different. I'm driving it out to my sweet little 92-year-old mother who is in rehab after a fall. God love her, I'm trying hard to help her get strong so she can come back home. Pray for Dorothy Mae to heal quickly, PLEASE. Bless you! I diced the ham, cut her up a fruit bowl and cut a couple of slices of very good smoked apple cheddar cheese. YUM! How will she resist?

Mama T. My exboyfriend got shot when some guy went on a shooting rampage. The police officer put granules in his wounds which probably saved his life. For people that are on blood thinners, I think should always carry Quick Clot, Blood Sease or something with them at all times. I’m not in the medical field but I would try something. We love you and keep blessing us. You both are two beautiful souls.

My mom grew up during the last war and depression. They were dirt poor. Every month gramma gets some what they called 'stamps' to buy sugar, flour and butter. Eggs and a lb of ground beef. 'The staples'. That didn't go far for even a fam of 5. But gramma did what she could. And you're right when you say we use every little scrap, no waste. That got passed down to mom, then to me. We didn't waste a thing. Y'alls salad...right up my alley. You ladies are beautiful souls. (oh, btw, I don't like the seeds and the water in my tomato. That is called 'tomato concasse'--(con-cah-say)--peeled, seeded and diced fine. Y'all don't have to peel them. ma'am Moma T, you're at the top! Just love you beautiful ladies. I grew on eating, neckbones pork fat back bacon soup and she didn’t waste the thing she didn’t throw away anything and for our treat she made these wonderful sweet potato pies fried and I’m gonna make those for you. Love this (and you ladies!) We make a version with celery, pickles, fresh peas, corn, lima beans and bacon. My great granny just put whatever vegetables they had from the garden or left over from a meal. If she had any left over meat, it went in too! Her meals were always delicious although very frugal. We ate what we had and were grateful to have it. One of the dishes is still fried mush .... left over grits set up overnight and fried next day with butter, salt & pepper.

I can't wait to try this recipe.I might add cheese because I love it. I go by Mama Tee from TN. I also worked in the salad dept. of our local hospital. I made sheet pans of corn bread, salads,desserts,rolls, jello salads,fruit bowls. I loved my job. That was 20 years ago.

I am an Okie so we know all about “stretching” a dish! I have a great salad that uses those ramen noodles out of those soup packages and you crush them up in the salad that has a shredded cabbage base with toasted sunflower seeds and a sweet vinaigrette poured over it but this is another salad that you mix up right before serving and you don’t save it because the ramen noodles get soggy after a couple of hours. Your saltines won’t stay crunchy for very long either even though all the rest of the ingredients will have a great flavor. I love saltines and will have to give this a try, the variations are limitless like some black olives sound good in it too. Anything salty or crunchy like some chopped celery would work great and then as the saltines get soggy you would still have some crunch. ❤

I’m 67 come October. Grew up in a tiny 2 bedroom trailer in rural Georgia with 3 brothers and mama and daddy. Every Christmas my Daddy, who sometimes worked and sometimes didn’t, would “allow “ my mother to work at Sears & Roebuck to earn extra money. She would hire Elnora, a wonderful black young woman, to keep us while she was working. Lord we loved that woman! She made some kind of soup beans, or greens, and cornbread for dinner every night. We were poor, but she was poorer. My mama paid her 10 dollars a week, (she made 25) and Elnora took home the leftovers. Great memories for me, and I hope for her.

Sounds like my raising sometimes the food was a little short. I remember times of water biscuits and water gravy not that great tasting but it filled the belly. I am so blessed today praise the Lord for my blessings, don't ever want to forget where we came from and appreciate where we are.

I had NO idea what that was called. I grew up in TX. Not super poor, but lower middle class and we also had to be very careful with money. We did something similar when we were kids and it was delicious! Didn't use ham, but bacon instead. It was so good, we forgot we were eating almost nothing but veggies and eggs. We called it "veggie hash". Nice to know where it originated and what it's officially called. Thanks ladies. You make me long for the south ... but not the heat, humidity, tornados, and the few times we got ice storms in the winter. So, I'll just enjoy you from Oregon with love in my heart.
