One of my favorite aspects of your videos is watching the close captioning (I have significant hearing loss). The southern in you shows when you say "boil", it shows as "bowl". The captioning usually understands oil, but occasionally shows as oal. Makes me laugh every time. I look forward to Tuesdays and Fridays for sure. Keep on keepin' on!

I married a southerner and the struggle is real when it comes to voice recognition software. AI technology absolutely CANNOT understand him. He gets so frustrated with Siri sometimes trying to voice to text or play a song. She never understands him correctly and always plays the most random music when he asks to hear a song. It’s so funny to me but it makes him super mad so I try REALLY hard not to laugh.

It’s country fried steak and although your recipe looks delicious, it was overly complicated. Next time you might want to try coating the meat in flour, salt and pepper then pan fry in half the oil. That’s really all that’s needed. We always add onions to the pan while frying and then add flour for gravy.

Hi Mandy, this dyed in the wool New England girl is loving your channel and southern charm. Every year I decide on a different cookbook in which to make a different recipe from every month. This year I decided to make at least one of your meals a month. I discovered you right around Christmas and already made the Rice, Beans and Kielbasa. Yum. I'm all alone so I'll be halfing your halfs. Anyway I do have a tip for you, I've found the best thing to use for when you want to coat chicken, pork ect. in crumbs is a pie plate. It gives you the surface space of a plate, but with higher sides. I also use it for when I make French toast. And I've heated up Leftovers in the microwave because my dinner dishes are vintage. I hardly ever make pies but keep 2 pie plates in my cabinet. Oh yeah, I take the stems off the spinach too. They go into my bag of veggie scraps in the freezer for making my own veggies broth.

Mandy, whenever I bread something I put my breaded meat on my cookie drying rack to let the breading set on the meat before cooking. Another great edition. Two things to consider. ALWAYS choke up on a knife, so your thumb, first finger, and sometimes second, are on the metal right in front of the handle. MUCH more control. Cutting an onion, or other dense veg. with a finger on top of the blade is not safe. Also the breading. Wet, and dry method. You were using your left hand to pick up the tenders from the drench, place that item on the plate with the dredge. The other hand only handles whatever is already in the dry coating mix, and to place it, in an air-fryer basket, on a pan, or holding tray, etc. Always glad to see the notification pop up for a new vid.

I keep a box of gloves in my kitchen for breading things. Peel the icky gooey glove off when finished and voila! No mess. I also double dip my chx fry. First like you did in flour mixture then wet mix again THEN in crushed ritz. I freeze them awhile so breading stays on them fry. Oh. Yum. Yes, peppered gravy is next best thing to homemade. I make it in the pan with the drippings and you can’t tell the difference.

1: Yes, chicken fried steak is a 100% southern thing, that somehow managed to reach us here in NY, by way of a buffet restaurant that has since gone bankrupt (guess all you can eat is a bad idea sometimes) 2: I haven't really gone and fried anything on the stovetop like that, mainly because I didn't have the cookware needed. Now, I have an enameled cast iron dutch oven, and an enameled cast iron deep frying pan. I'm ready to fry some sh*t (and started with an American take on an Austrian staple. Weinerschitzel, only I used a pounded flat pork chop. My wife loved that, so I did some chicken too. Again, loved it, and told me the obvious thing. "It's not greasy", so I knew I had it right.) 3: This week, I've tried a couple older recipes you've featured. Let me just say that neither one of them had leftovers. 4: When you said the Cheeseburger Pasta needed 3/4 lb of beef, and 1 1/2 cups of pasta, and used 1 lb of pasta, and 1 1/2 cups of pasta, it threw me. I'd have used the lb of meat, and the whole lb of pasta (you were looking for 3/4 of that box, btw) It would keep the ratios just right.

I didn't have buttermilk but I gave it a splash of beer in the milk egg mixture. I could've used lemon juice or vinegar to make buttermilk but the beer added a nice flavor to it. Thank you so much for this awesome recioe. It's a definite keeper!
