Your videos are like home to me. I feel like I'm hanging out with my family and cooking when I watch your videos. I had my first son in February this year and I haven't been on youtube really. I've missed your videos! Thanks for posting. I know it's hard work and can be alot to keep up with at times. But viewers like me really appreciate all you and Chris do

I never use cooking wine. I just pour from a bottle of wine that we drink. Great advice on leaving some water in the pot with your lasagna so they don’t stick together while trying to layer!

We lived in Michigan,….and every spring was Vidalia onion season,…..love them on a hamburger and hotdogs…..yum

Northeast is full of Italians and great Italian restaurants. Never had lasagna without ricotta mixed with an egg, the creamy testers with the mozzarella is a must. Give it a try next time. And a few more layers.

I'm in Iowa and yes we can get Vidalia onions. When our grandson was stationed at Fort Stewart Georgia, we drove down to visit him. Our GPS took us the wrong way and we ended up in Vidalia. I was so excited.

Love rosemary. Don't love the sticks & could never chop it up fine enough. So happy I found ground rosemary. Game changer.

@@jazzbeaux6154 Make sure it's ground into a powder. Not so sure about crushed. Our Wal-Mart carries it but has to be shipped. Got mine through Amazon. Good luck👍😋.

Oh Tammy this is a hard one for me to watch. Raised in an Italian home Lasagna should always have ricotta cheese, real wine in the sauce and at least 4 layers. I love your southern recipes and that’s what you do best.

My Italian aunt taught my sister and me to cook Italian food. I will remain forever grateful. Where we lived, we could not get ricotta, so she substituted cottage cheese, but told us to always buy ricotta if it was available. Her lasagna is still a family favorite all these many years later…

Typical lasagna has meat sauce and white sauce (like mac n cheese sauce, up to adding cheese.) No cheese in bechamel. Never ricotta in Italian lasagna. (Lasagna bolognese) Sicilian lasagna has ricotta. Different parts of Italy make food differently. It looks delicious, Tammy

We don't normally use cooking wine or sherry, they can sometimes be saltier. We just buy the small individual bottles in a 4-pack for cooking with and store leftover opened wine in fridge for next time.

I'm not Italian and haven't ever had a problem making my sauce for lasagna without wine - cooking wine - or otherwise and I have never had someone complain. 😊 I believe in cooking stuff the way your family likes it and not fixing stuff to please people who aren't even eating your cooking.

Thanks Tammy and Chris! I love lasagna! Wine - one could buy the "Demi" bottles at point of purchase at the liquor store. I enjoy wine so I would rather not use cooking wine. A 750mL bottle (full bottle) can be a lot if solo, like myself, and not drinking the same day (or even over a couple of days). A Demi bottle is one cup for the sauce, one cup and a smidge at dinner. :) If all y'all have is a large bottle, (or you don't drink wine but would like to have it handy for cooking,) you could always freeze in ice cube trays and toss a couple of cubes into a pan, etc., to deglaze when making gravy and sauces. Once frozen, release trays of frozen wine cubes into a freezer bag. Just an inexpensive Cabernet Sauvignon (red) or Sauvignon Blanc (white) is all you need. God bless!

Thanks for the recipe, Tammy. My husband loves Lasagna, so I'll make this for him. I will use Texas Sweet Onions and Hunt's Tomatoes in ours. FYI: Hunt's tomatoes remove the skins with steam instead of chemicals. ❤

Instead of wine just use beef broth, I’m not a fan wine in my meals . Also my family are Italian they make their own sausage it’s called bull boar , personally I’m not a fan of that either but the town where the family come from all love it .

I would recommend a Pinot Noir for your red wine. You can buy an inexpensive but good one at Costco. I know you care about your ingredients so that’s why I suggest that you not use cooking wine. I think you will enjoy the taste of this not too heavy red wine in your lasagna.

It really depends on what region of Italy you’re trying to emulate in lasagna and sauce making, never cooking wine. I’m Italian, have several recipes for both some use wine, some don’t. If I’m ever in Georgia I’d love to make my favorite for you and Chris, just so you can taste the difference.

Rule of thumb, when cooking with wine, use your favorite drinking wine of the type required, ie, red, white, rose, dry, sweet, whatever.

On the wine - any inexpensive red wine would work. Cooking wine is very salty, so if that’s all you have, I’d omit it. If you don’t drink wine, just freeze what’s left over and cook with it later.

I would get a Burgundy. Not too expensive and you can cook lots of yummy things from it. Not only wonderful tomato sauce for pasta and pizza, but for Coq Au Vin, also for Boeuf Bourguignon (Julia Child's recipe in The Art of French cooking, is wonderful). Heck even with some sautéed mushrooms for a steak.

Advice from the many chefs on TV say to use only wine you would drink. Cooking wine has too much sodium & not a very good taste. Just sayin what I've heard.

So far no problem getting vadalia onion in Delaware. I too have read that you should cook with a wine you would drink. Having said that I have used the grocery store cooking wine. The suggestion to buy a smaller bottle and freeze cubes with remainder is a great idea. As for the omission of ricotta, just because it is typically there doesn’t mean you can’t make a tasty dish without it. Tammy, your dish looked delicious. And still looked like a traditional recipe to me. The more layers the longer it takes in the oven. I love Italian food and I will definitely give this a try.

I live in PA and we have Vidalia onions. You're using Aldi's canned tomatoes. I do too but I put a small of tomato paste in too with a little sugar to cut the tartness.

✍Hello Tammy and Chris and fur babies🐾🐾🐾 Tammy I married into an Italian family 61 years ago and had never eaten Lasagna or much of any thing cause I was a picky eater. My mother-in-law never used wine of any type in her cooking She also taught me to use cottage cheese mixed in 2 eggs and some dry mozzarella cheese, pepper and Italian seasoning...instead of Ricotta cheese. But of course cooking now for all those years I love lasagna and most of everything else...ha ha ha Tammy I love everything you cook and even "your company" visiting with us and sharing your lives with us. I made spaghetti with meat sauce yesterday...I should have made lasagna cause, I've got a box of lasagna noodles I've had for a while and need to use them up. Your Lasagna looks delicious... Even though I was born Southern, my bloodline is Italian, therefore, I do prefer cooking with real wine rather than the cooking wine. There is a big difference and I think it's much more healthier. Your Cabernets, Pinoir Noirs, and Merlots work very well with pasta, and I use (not drink) Chianti because it is an Italian origin and it's more affordable.

PS...Tammy I got rid of my "chicken dish" when I started getting rid of my glassware. It never crossed my mind to use it for a butter dish till I noticed you using all your Fenton glassware. I even remember commenting to you about not washing it in hot water and you said...you were going to enjoy yourself using the glassware. Oh well will need to pay better attention...ha ha ha

I was going to say the same thing. Lasagna without ricotta isn't lasagna, it's just meat sauce with pasta. So confused. I came in late so might have missed it.

Italian lasagna doesn't use ricotta, it uses bechamel, a white sauce. Sicilian lasagna uses ricotta.

Tammy your nails look perfect beautiful color on you 💅🏻 Your lasgna looks good for an American take on it. I am 100% Italian, my parents came to America in 1965. So my lasagna is very different, we make meatballs fry them cook them in homemade sauce, No rosemary and no cooking wine. We use ricotta, mozzarella and romano. Everyone has their way and yours looks great! My husband works for Amtrak, we get free tickets and I always wanted to go to Savannah because my favorite movie is Gone with the Wind, maybe one day I can show you my lasgna recipe.🇮🇹 If you ever come to NYC I will take you and Chris to an authentic Italian restaurant.
