I also grew up eating "non-standard" pancakes (a dutch family recipe, they're thinner, not quite a crepe but closer to that - the edges get some nice crispness too) so I definitely feel you on not really caring for the thick, cakey ones. I don't like how they just sponge up all the syrup and become mushy. Anyway, loves these vids, hope they can continue!

My mom also makes pancakes with crispy edges. She accomplishes this by adding butter to the pan while she cooks the pancakes. Pancakes with a slight crunch are superior.

I think you'd really like Pamela's Pancakes if you ever visit Pittsburgh! They have these "secret recipe crepe style pancakes," which are thinner with crispy edges. They're very good!
