Another good option for soaking is to add a tablespoon of Kefir. The probiotics do a good job of fermenting the grains making the nutrition more bioavailable.

My wife is Ukrainian; we eat buckwheat on a regular basis. I noticed that your buckwheat is "green", or raw. We buy buckwheat from international grocers, or the Russian store. Almost all the buckwheat used in Eastern Europe is roasted....it looks more brown in the package.....a little more delicious. Love buckwheat.

Hey there! Thank you for sharing your recipe! I used to do something similar with wheat berries, they would sprout for 2 days before being added to fruit and plant milk… I’m definitely trying this! A word of caution : buckwheat is an allergen, so to those who’ve never had it, try a very small amount first, like half a teaspoon, and wait a few minutes (a friend of mine got a violent - but short - reaction from roasted buckwheat used as garnish in a chia pudding… fortunately it was a very small quantity)

I haven’t heard of it causing any issues, but couldn’t say for sure. I’d check with a health professional if you’re concerned about it. 😊

Does the soaking also remove some of the oxalates? Buckwheat is VERY high in oxalates. Last time I tried it my kidneys were hurting for days. Maybe cooking it would remove the oxalates?

That is a great question! To be honest, I don't actually know the answer! The only two I've ever heard of are buckwheat & oats. I've seen soaking & sprouting grains before cooking them (and beans as well), but not sure if any of those could be eaten _without_ cooking. I'll be sure to ask in my sprouting FB group! Ground flaxserd looses its nutrientritional properties within minutes of being ground. You must grind it immediately before use. If it gets a smell it's gone rancid. And that can happen rather quickly when stored. It smells like linseed oil when it's gone rancid.

Can I eat this soaked in coconut milk overnight ? As in no rinsing in the morning. I usually just mix honey and water with my overnight oats and then just stir and eat in the morning. Can I do this with buckwheat?

I think it should be fine! I have read that it is OK not to rinse. 😊 What I would do, personally, is just to rinse the buckwheat with water BEFORE soaking it in coconut milk. So give it a thorough rinse with water (until the water runs clear) and then add your coconut milk and let it soak in that overnight. 🌱 Hope this helps!

Someone else actually asked before as well so you are not alone. 😂😂 The only thing is, I'm not as familiar with roasted buckwheat! 🙈 I tried to google if there are recipes for eating it in the same way (just soaking overnight), and I couldn't really find much info. I would say it's worth a try, and if it doesn't seem to be the right consistency after soaking 8-12 hours, then go ahead and cook just it to be sure. (And keep in mind soaking it will reduce the cook time!) Wish I could be of more help, but hope this works!

Yep! Should be totally fine to mix those together. I do rinse the overnight buckwheat, whereas overnight oats I usually don't rinse... But I guess you could mix them together after rinsing the buckwheat. 😊 Buckwheat is fine to eat without cooking, as long as you soak it first. Same with oats. Hope this helps! 🤗

The buckwheat I just bought is roasted & I've been soaking it for 5 hrs how and the outer dark skin is coming off as I change out the water. Is that suppose to happen? I've rinsed it about 4 times and after I refill the bowl with water, more dark skin keep coming up. When does it stop? Can I still leave it for an overnight soak? I'm trying to get rid of as many ANTINUTRIENTS as possible bcos of my health issues. I wonder if the raw version you show us in this video would be a problem for my IBS & digestion compared to the roasted I bought? Hmm? Hey there! I’m actually not familiar with the roasted version (I believe it’s called kasha?) so unfortunately I can’t help you much with that one. I do think the raw might be ok with your health issues, but definitely try a very small amount first to test it. I’d be curious how it goes with the roasted one you bought! Usually with soaked grains it cuts the cooking time in half, if not more!

I was concerned if I could eat Buckwheat Groats RAW, in place of Old fashioned oats. This video answered that question. However, do they get kinda get milky, like oats do??? You could definitely experiment with adding just water instead of plant milk! I do feel they get a bit creamy... but definitely not as milky as oats (I usually eat my oats with just water for example, but these I do prefer plant milk). That being said, I think if you added a lot of other items such as those you listed, you might not notice that they're not as milky (especially banana for creaminess!). Let us know if you do try it out! I'm curious about the results myself. 😀😀

I am liking the Overnight Buckwheat Groats!!!! In water is fine for me. They are delicate and even have a floral scent when you soak them in water. It's a WIN for me!! 👍👏😁🥰🌟🌿🌱💚💜💛❤💙🌾🌾🌾🌾 I take two bananas and a cup of water, blend in blender a few seconds to make banana milk, pour on the Buckwheat Groats and add other ingredients. 😋

It tastes raw maybe a bit from the texture. It's much more crunchy than when cooked. But I prefer it actually! I'm not sure if it's low in carb or if the soaking water gets starchy, but here's what ChatGPT says: "Soaking buckwheat overnight does remove some starch, but the exact amount can vary depending on the soaking time, temperature, and water-to-grain ratio. When grains like buckwheat are soaked, water helps break down the starches, making them easier to digest and lowering their glycemic index. Some of the starch is released into the soaking water and can be rinsed away. There isn’t a precise percentage widely documented for buckwheat starch loss during soaking, but based on similar grains, you can expect a small portion, likely around 5-10%, of the total starch content to be removed." Hmmm I don’t remember there being a smell, but sometimes I will see some discoloration of the water. Definitely give them a good rinse or 2 just in case and then taste them and see if they taste ok. 😄 If any unusual taste or odor once rinsed, you may want to toss them but I haven’t had that issue before so not entirely sure!

they called it "toasted buckwheat" where I get it. I don't bother soaking it. I just put it in a small bowl, with water and put it in the microwave. It takes a little longer than oatmeal to get soft, maybe seven or eight minutes, but it's really good, not as mussy as oatmeal. I love the toasted kind. Bulgar is also a good substitute for oatmeal. Thanks so much for making this video! I'm new to eating plant-based and I'm also reading Woman Code and trying to sync my eating a bit to my female cycle. Buckwheat is recommended for the menstrual phase, along with wild rice. I'm excited to get some buckwheat grouts tomorrow! Hopefully my local German stores (we're military) has some in stock!

Wild rice is great, although there has been some concerns over arsenic levels with rice, you can check out more info here: nutritionfacts.org/2021/01/07/how-risky-is-the-arsenic-in-rice/ and wellnessmama.com/health/arsenic-rice/ (We still eat rice, but I always feel it's good just to be fully informed, so just passing this info along. 😄) Hope you're able to find buckwheat!!

Yep! Similar to oats and how many people will make overnight oats just by soaking them for 8-12 hours. ☺️
