"was" makes it sound as if life was only like that while Forrest's mother was still alive, instead of being like that in general, which is what Forrest's mother was _actually_ trying to say. That is like if someone were to say "life is unpredictable", and then as soon as that person dies it suddenly _"was_ unpredictable".
