LIMA BEANS 1 (16oz) Pack of raw Lima Beans 1 Half Stick of Butter 1 Onion 1 Green Bell Pepper 2 Sticks of Celery 3 Cloves of Garlic 1 lb of Smoked Pork Tasso 1 32oz Container of Chicken Broth 2 Cups of Water (from boiled beans) 1 Tablespoon of Cajun Seasoning 1/2 Teaspoon of Garlic Salt 1/2 Teaspoon of Pepper Start out buy heating a medium sized pot of water on a high heat. After you turn the heat on, wash your Lima beans and then drop them into the pot of water. Let it come to a boil. Meanwhile chop the onion, bell pepper, and celery. Once you see the beans come to a boil, set a timer for 10 minutes. Leave uncovered. In a separate pot, melt half a stick of butter on a low heat. Once the butter has melted, drop in the vegetables and begin stirring occasionally over the next 25 minutes on a medium heat. Slice up the pork tasso and chop the garlic. Add the garlic to the vegetables. When the 10 minute timer is up for the beans, drain through a strainer over a bowl to reserve the bean broth. With about 10 minutes left on sautéing the vegetables, add the tasso in. After sautéing for another 10 minutes, add some of the chicken broth to break up the bottom drippings. Once you’ve gotten all the drippings up from the bottom of the pot, add in the rest of the chicken broth, lima beans, and 2 cups of the reserved bean broth. Add the Cajun seasoning, garlic salt, pepper, and bay leaf to the pot. Raise the heat to bring to a boil. Once the pot has reached a boil, cover the pot, lower to a simmering heat, and let cook for 1 & 1/2 to 2 hours. With about 45 minutes left, begin cooking some rice. After the beans have cooked down, remove the bay leaf. To thicken the liquid in the pot, remove about a cup worth of beans with a slotted spoon and put into a bowl on the side. Mash the beans and then add back to the pot. Do this until you find your desired consistency. Serve over rice and enjoy!

For those of us who do not live in Louisiana and do not have a Rouse's near what would we use in place of the tasso? Country ham hock? Love the channel and love your recipes bro but I cannot for the life of me understand using one bay leaf. I use 3-4 at least in most recipes. I think Tom Fitzmorris does a good job with bean recipes in his book on New Orleans cooking. He says he has been eating red beans every Monday of his life.

Just watched your video. The butter beans excuse me, the Lima beans as you call them, looked great. I grew up using the same seasonings and measuring the same way. My grandfather would have a okra salad or pickled okra on the side with his meal. Nothing beats country cooking. Thanks for sharing your video.

Ahhh dude I love me some Lima beans over rice and da pork chops is a big add +++. Being I’m from Charleston, South Carolina you know what I like!!! It has been years since I cooked fresh green beans. I need a recipe for those. My dad use to love lima beans or any kind of beans. All of his children love beans so you know we are his. 😂😂😂 I love fresh frozen baby lima's. I cook that with a good beef rump roast with gravy and a Waldorf salad. Yummy! my mother used to scoop out about a cup , put in blender then return the "mush" to the pot.....So I do that too ! lol be careful blending hot foods !!

OMG!!! I would try this, and I don't even *like* lima beans! It does look a little bit like my navy bean soup. I like the idea of mashing some of the beans. Frankly, I don't have the patience to cook longer. BTW, great T-shirt! Stay safe down there!
