I've used the hearts of palm for keto lasagna and tried the "pasta" versions as well. I think they taste great and have a really good texture.

I lived in costa rica and we'd get the 3 or 4" in dia. We eat with avocado, cucumber, tomato and heart of palm, balsamic vinegar..Solo Bueno..

I make keto bread, then I shred some hearts of palm, cook them in spices, barbecue sauce and duck or pig fat, I spread the hearts of palm on the bread and eat it like that, it is SO good, kind of like eating a barbecue pizza!

Hearts of palm are a good source of many nutrients. They contain protein and fiber, and high in vitamin C and vitamin B6, calcium, niacin, phosphorous and zinc. Not that many vegetables are high in protein, so this is good to know, especially for vegetarians. They also low in calories; about 40 calories in a cup.👍

This is super common here in Brazil. It’s not the cheapest veggie but it’s affordable. Generally you buy it perserved in salt and water solution. Just open the bottle, drain water, put some olive oil and it’s read to eat.

The only problem with hearts of palm is how it is extracted/cultivated. There is a specific species from brazil and Bolivia that are extracted with no regard to the rainforest.

I'm anemic and was in search of high iron foods. I just happened to look at a can of hearts of palm and noticed it contains 40% of daily value or iron, yet it's never mentioned when you Google "high iron foods". I love them. I eat them right of the can. I'm also low-carb so it's a great option for me.

Can you pleaseshare the brand you used? I tried finding one that had higher iron but all I could find was a can from Trader Joe's has only 2% iron ( 0.3mg) and the Aldi's brand bag of pasta lists 0% ( 0mg) of Iron. The brand he discussed Natural Heaven states it has 0mg (0%) of Iron, and only 2% RDA potassium. I would like to find the one you have that list 40% RDA.

I first heard of hearts of palm back in the 1990s. Problem was, back then, they were being harvested in a terrible and unsustainable way with no heed to the environment and the local way of life where the palm tree were being destroyed for this small delicacy. I've never tried one but I would like to, if you can confirm that they are now being sustainably produced? Thank you in advance.

Excellent point Joanne. I harvest heart of palm for a living and it is DEFINITELY NOT SUSTAINABLE. It's barely even profitable! The process is extremely difficult to automate and requires skill and experience to be done efficiently, which is technically where the profit comes from; efficiency of labor. Harvesting it is insanely wasteful, and the resulting product doesn't really have much of a taste. If you want something similar try white asparagus

They are in almost every salad I've ever had in South America. I've also seen them on menus in several Miami restaurants. They are available in my local Atlanta Krogers in a jar and by the capers. I don't think they have much taste.

Mashed palm with potato extract (yes, that's a thing) tastes like mashed potatoes and has almost no carbs. Maybe two carbs per serving. Also from Ketofocus Low Carb Keto French Fries 100 g almond flour (1/2 cup + 1/3 cup) 1 tablespoon xanthan gum 1/2 teaspoon salt 6 tablespoons hot water 20 drops mashed potato flavor drops avocado oil for frying or baking

Guys, don't eat these. It is a delicacy here in Brazil but you gotta kill a whole tree in order to extract that single small heart (which explains why its not very popular outside of Brazil). This is very devastating to the environment.
