Learning to make Ghee is a great Homestead skill! Ghee is a healthy, shelf stable fat that has a higher heat point than butter. Butter’s heat point is 350* and ghee’s is 485*. Another homegrown, so good for you product from the homestead🥰. God bless!

sigh...i made another batch. This time I started from the lowest possible temperature on the stove. The butter melted just fine. The bubbles started small, and I thought everything was going to go well this batch. But then everything start to roiling, and suddenly there was a burning smell. I hadn't even left the stove, and there were barely any milk solids. But something burned, and there I was again, over the kitchen sink, trying to separate out the burned stuff on the bottom without losing too much oil. I've decided I'm not going to let it bother me or worry me too much. I'm just going to keep making batches, pay the best attention I can, and work on improving them each time. And I'll stop using Target store brand butter. There's just SO MUCH water in it. I'm so glad you're willing to teach us these things.

Oh bless your heart! I do find that store bought butter does have a higher water content. That makes it more difficult to render down. If you have an electric stove you may have to move the ghee off the burner from time to time as you adjust your heat. You will definitely get a feel for it the more you try. It sounds like you are really enjoying the journey🤗.

Thank you!! I actually found these at Walmart near the kitchen towels. Sam’s Club also carries a little heavier weave towel but I like the lighter weight because it allows the oil to flow thru better. Cheese cloth would probably be too porous tho. You certainly could but you aren’t actually “canning” the butter. You are really harvesting the fat. If it is rendered down and all moisture is removed from the cooking process you are left with just the liquid fat and milk solids. Moisture is the enemy, setting you up for mold which ruins the ghee. I do keep a watch out for mold in my jars but don’t usually have any. Once in a while I will have some show up which tells me I probably was in a hurry and didn’t wait for that perfect point. That’s rare because I’m very patient when it comes to making my ghee. The clean oil will last for months on the shelf but it can get rancid like other fats with time but we use ours up quickly. You can store it in the refrigerator and it will last almost indefinitely. Hope this helps answer your concerns. Thank you for watching and asking a great question! God’s richest blessings to you🤗

@@LittleCountryCabin oh, i should have mentioned... I've watched several videos and yours is the closest to how she made it. However she never stirred it, even the top. She just swirled the pan by the handle a few times. She knew it was done by the change in bubbling sound to more of a "snap".

Hi Jackie. I love your videos and your hospitality. I have seen this video before but now I am wanting to make some ghee so I watched it again. My husband went and bought some ghee, I almost fainted. The first thing you said was not to use salted butter. We have this Kerry gold butter that neither of us likes but it is salted. Will that work or should I go get some unsalted? Thank you.

Hello! It would be fine to use the salted butter. The taste may be a bit different but still very good. One thing to note tho. The butter may foam more because of the salt so be sure to use an oversized boiler. I’m so excited you are going to make ghee! You already know it’s a lot more economical than store bought. Yes!! My “go to” oil for so many things! Especially pancakes😉. It even compliments the flavor of my Einkorn pancakes. They have a sweet nutty taste that blends well with ghee😊

What kind of cloth is equivalent of a flour sack towel, I haven't heard of them here. ETA could you use an empty cloth rice bag, cut up and finished edges? Although I wouldn't know where/how that cloth was treated but it held rice?

My mother used lard all the time, but in the 60’s? Lard was supposed to be bad for you, so I’m just wondering for your take on it (I’ve also noticed more people liking lard and rendering it themselves. Welcome to our Cabin! Thank you so much for the encouraging feedback and great questions. In my journey to move away from processed foods to more whole, nutrient dense foods my research led me to the revelation that fats in their natural, unaltered state were actually good for us. The medical field is slowly beginning to acknowledge this as well. It’s been found that the process of hydrogenation is a terrible process that affects our health in a negative way. Things like shortening and margarine are hydrogenated, highly processed foods. A book that I highly recommend is “Nourishing Traditions” by Sally Fallon. She goes in-depth into our food supply and how so much that we purchase and eat has been altered and actually stripped of so much nutrition. Great question! My understanding is that the salt can make the butter froth or bubble up even more so you would want to use an even larger pot to prevent boil overs. As for taste it seems most of the salt is captured in the milk solids and thus removed from the ghee left at the end. If all you have or can find is salted it’s perfectly fine to use. Yes sir, and to have a higher flash point oil as well. Ghee can be heated to 400+ ° before scorching. As for shelf life, if you clarify it correctly and basically remove all moisture it is shelf stable for months and even up to a year. I’m actually using some that is a little over a year old and it is wonderful. The enemy is moisture which can set you up for mold. Very clean jars are also of upmost importance. I made my first batch of ghee! it's not so good looking. the milk solids at the bottom started to caramelize. so I stood over the sink trying to get as much of them out as I could with a fork. I used target store brand butter. there's so much water in it. so my ghee isn't a regular color and there's still milk solids in the bottom. but it's there.

I made homemade ghee from our milk but as soon as I put the ghee in theason jars, I immediately put the lids on and a few minutes I will hear a ping. The reason why I put lid on while hot to it will seal for longer shelf life. Would that hurt my ghee fromdoing so? Thanks in advance for getting back to me. May God bless in everything you do.

What a great question! I really understand about hearing that ping😊. It’s a wonderful sound! My concern would be condensation building up in the jar and on the lid which could lead to mold. If you've cooked the butter and removed the moisture, what would be left to cause the condensation? Wouldn't the vacuum created resulting in the "ping" of the lid keep the air out, thus creating a better environment for the ghee? If it's shelf stable without "sealing", wouldn't it have longer shelf life "sealed"? Genuinely curious.

@@bethbrec I have been giving some thought to this lately. When I render lard I fill the jars nearly to the brim and place a canning lid on while still quite warm. It seals with that “ping”. Technically not canned but sealing out air movement. If I have removed the moisture from the butter (rendering) could I not “seal” the ghee for even longer shelf life? I think I will try that with a jar or two next time I make ghee and see how it turns out over time. Thanks for asking a great question!! God bless❤️
