Serves 4
• 1 tbsp olive oil
• 2 cloves garlic
• 2 tsp mixed herbs
• 1 medium brown onion
• 500g minced beef
• 700g Passata
• 2 tbsp BBQ Sauce
• 2 tbsp tomato paste
• 1 med zucchini
• 1 med carrot
• 150g mushrooms
• 3 cups beef stock (or 3 cups water & 2 stock cubes)
• 300-400g Risoni
• Salt & pepper to season
• Fresh Parmesan to serve
METHOD
Place carrot, zucchini & mushrooms into large food processor bowl with main blade.
Process to desired consistency (I make it really fine to hide the vegetables). Set aside
Place garlic & onion in metal bowl. EXPERT, starting on speed 3 & turning up until finely chopped.
Add oil & mixed herbs to onion & garlic. EXPERT 3min/2A/120 degrees.
Add mince to onion mixture. EXPERT 5min/1A/120 degrees
Add passata, BBQ sauce, vegetables, herbs & stock. 5min/1A/140 degrees
Add Risoni. EXPERT 10min/1A/120 degrees. Risoni should still be a tiny bit hard and will be very saucy. It will continue to cook once off the heat, giving you time to prepare bowls etc.
Check for seasoning, stir through.
Serve immediately, garnish with freshly grated parmesan.
