Adults shake hands as a way of showing respect. I would give a kid a high five or a fist bump if it's appropriate. I live in the U.S btw, people don't really want you touching their kids. Maybe it's different where you're from idk.

Interesting question. In the UK the etiquette is when introducing yourself to only shake hands with someone who offered you their hand first, as you're there to work. Most kids don't like handshakes because it can hurt, also most kids wouldn't have the confidence to introduce themselves. However if you're thanking someone for helping you out with a trick you could then offer them a handshake if you wanted to, but if someone is thanking you they'd start the handshake.
