Great video! I still cannot believe,after years of driving by the factory & loving the sauce that the amazing Sriacha is no longer. His immigrant story is amazing,fleeing the vietnam war & making billions with his Sriacha sauce is 👍💪

Sara: I would simmer the sauce a little longer to thicken the sauce and intensify the color. Also from each bulb of garlic from your friend return the largest clove to the garden . As they are acclimatized to your region they should give you the best results. Planting right through September for harvest next August. the old guy Bert

Sara I have been making my own hot sauce for years, you have it correct, boil and simmer everything just like you do and after final seasoning just water bath can it it will keep just fine and you can make larger batches. Also try a little tomato paste to improve the color and add another layer of flavor. Great job keep it up.

Hey Sara your basket is so cool. I'm an old man that loves "picking baskets " ( and of course what I grow to put in them ! Lol ) your ducks bring back so many memories , my 4 girls and I used to go "duckegg" hunting in the bushes ! So much fun. But , your love for the peppers just knocks me out !! Wish my jalapeno would turn red quicker . Thank you and Kevin and the girls so much. God loves you and so do I.

Ferment first. Makes huge difference. Also, when you strain the mixture, save the pulp and dehydrate. Makes a delicious seasoning!

if you ferment can you still can the sauce in water bath (or pressure canner?)

I dehydrated Fresno chili peppers yesterday and ground up for seasoning. I have made my own parsley, oregano and basil. Never to buy from store again! We made pepper jelly also. I didn't know anybody else was crazy like me about growing peppers. They are so beautiful.

Almost Done I store all my herbs and seasoning in canning jars. I vacuum seal the lids. I keep small portions in smaller spice jars that we are currently using.

debra oster wish you had a KZbin channel walking us through the process... I have a vacuum sealer with the jar attachment but have no idea how to use it... or are you talking about pressure canning?

Almost Done I put a flat canning lid on the jar then your jar attachment goes on. There should be a tubing that fits into the hole on the attachment. I have to hold the tubing tight on there. Turn machine on. When it is finished I have to kind of rock the attachment back and forth to get it off. Check to see if it sealed. We have talked about a KZbin but I am not brave enough for that.

I love this recipe it’s the same kind I make and I do waterbath mine for 15 min and it is shelf stable.

The best thing about your sauce it the fact you know what it is made of. Fresh ingredients without chemicals that most can not pronounce. Well done and thanks for posting.

Time for a small pond for the ducks. Can also be used as a small reservoir for water irrigation the garden. Nice recipe. You could try adding a one or two tablespoons of tomato paste to smooth it out. Or try sweetening with honey or molasses instead of sugar. Even swapping vinegars for cider vinegar would be fun. Good video.

Very cool. Looking forward to the fermented version whenever you try it. Also, I have found that sauces tend to darken/ mellow with time. You could freeze 1/4c as a control, to see how the canned version develops over time (3 months ?). Thanks for your videos.

Sara here in Michigan we have short growing season too for peppers so have to do something with them asap so I make a SriRacha Sauce similar and I put it up in half pints or jelly jars and waterbath for 15 min. and I only do this every other year so they keep really well on the shelf for at least two years if it last that long. kids love it

Hey Sara, if you ever see this.....I made this recipe in 2022 and canned it twice....and that is all gone....I LOVED IT!!! I came back because I am ordering my pepper seeds for 2023 and I wanted to make sure I ordered the right ones. :) Also I have a bunch in the freezer cleaned and ready to do so I think this week I am going to pull them out and make this again! I FEEL HEAD OVER HEELS IN LOVE with this SriRacha! I don't know about you but I got very sentimental seeing you on this homestead.... :( Well on to seed sorting and making sure I can can lots and lots of sriRacha!!

I made some earlier this week......my first time also. I used a combo of Thai chili peppers, jalapeño peppers, habanero peppers and banana peppers.

Baton Rouge I.E. Stick Red. this is how the Tabasco company gauges there peppers for ripeness. compare the pepper to the red stick.

Thank You! Thank You! Thank You! Pepper Sauce recipes was next on my look up list. I have tabascos and jalapenos to do. I already have enough of them plckled and dehydrated for the coming year and was wanting to make SriRacha and the traditional tabasco sauce. My hubby likes Pico Mas. I could probably use this same recipe to make it from the green jalapenos. You could water bath the sauce for 15 minutes to make it shelf stable. Much Love

I fermented a variety of peppers together last year and puréed for hot sauce-better than any store bought we’d ever tried🙌🏻 I need to make sriracha-we love it-but… I picked most of them already -we’ll see what I get over the next couple weeks🤞🏻

Thank you Sarah! I’m going to try this next summer my household goes through so much of sriracha sauce. I like how you mentioned about changing to homemade rather then store bought I’ve been slowly switching to homemade as we run out of things such as mayonnaise, ketchup, etc. Again thank you so much for your videos, and yes I’ve heard you say it and wish it was possible to come over and have a coffee and stroll around the homestead

That, I would really like. I also use the same store bought Sriracha that you show here in your vid. Looking forward to your other recipe for Sriracha sauce. I only have a few jalapeno plants this year, but should get enough peppers to make one batch anyway. I'm not interested in buying any peppers to make more ....... just want to see what my peppers produce.Take care.

Sara, I use the same recipe except instead of white sugar I use brown. For added heat I use 2 ghost peppers. It isn't as hot as it sounds but it really taste fantastic. You can use this recipe or ferment it. It will work both ways. I made 1 bottle and it has last me 3 years so far. :-)

I hate hot stuff but watched this cause I Love y'all. I liked your garden fabric so much I bought some for next year..ready to go. We free range our chickens and couldn't find their eggs, today we made them stay in until the eggs were laid. We went fishing so we didn't have to hear them complain about it...one silver salmon..homesteading hobbyist in Alaska.

saving seeds are the best way to keep your favorite plants, I have tomato seeds from 5 years ago and not the first seed has not come up ...some stick together and I have double plants.

Sarah, pretty please, could you get together with your friend an do a video on growing garlic? I tried, in a pot, over winter in GA. It grew nice tops that died own in winter then nothing grew in the spring. I think the pot got too cold and dry and it would have done better in the ground? OTOH, I have pots of ginger growing like gangbusters in pots on my deck. I used organic ginger from the grocery store. The plant looks a little like miniature bamboo and all parts smell like ginger. It is a pretty houseplant, even if I get no ginger to eat.

Herschel1738, I have never gotten ginger to grow. Want some organic ginger in the worst way, it just dies. My garlic has been a fight, the squash got the garlic this year. But keep trying in my tiny tiny plot.

Sarah idk how on earth I missed this video? I’m at least happy YT finally showed it to me. This looks amazing! I myself am not a huge fan of spicy 🌶 food. I like a little kick now and then but the strongest I’ve ever gone is Franks hot sauce. Just the original. My family on the other hand LOVE the heat. I grew tabasco peppers for the first time this year. So I decided to make my own to take to my daughters for Thanksgiving.. She’s so excited. I used tabasco, jalapeños and banana peppers. Chopped them up roughly in chunks, except the tabasco. I just poked a few holes in them and cut the stem end off. I added A LOT of minced garlic, some black peppercorns, turmeric, salt, a little sugar, apple cider vinegar and filtered watered. I just put it all in jars and shake it every single day. I tasted it yesterday and OMGOODNESS it is DELICIOUS! I can’t believe it. It tastes just like the yummy southern vinegar hot sauce my great grandmother used on her collard greens. Which she ate at least once a week! LOL Usually more cause she’d cook a huge mess with ham hocks or shanks, then pull the meat off the bones, toss that into the greens and that’d be their meal for a few days. With cornbread of course. So YES, I too am excited about hot sauce this year. LOL More for the memories and because my kids will love it but still. I had tell ya. TFS!! God Bless you all! ~❤️ Lisa

Sarah, try adding a small chopped carrot to your mix before cooking! It will add sweetness and thicken your sauce. You may not even need the sugar.

Do you have a small pool for your ducks they seem to love the water. Why don't you put your sauce in freezer trays and use a defrosted cube one at a time that way you can keep them for at least a year in the freezer. 👍🏼

For shelf bottling i found bottles on amazon 5oz with white drip cap screw lid and shrink wrap. Sanitize bottles and clear drip caps as any other jars, keep bottles hot so hot sauce from pan doesn't break bottles. use bottle funnels to pour sauce in. Apply white drip caps then screw caps and flip upside down once to seal and use the shrink wrap for shelf storage. (Apply using hot water quick dunk or heat gun if available) also make sure sauce is 180 degrees b4 goong i to the bottle! When i am able to make bulk it has lasted at elast a yr on shelf (unless we eat it or share it faster. Hope this helps i can send link to bottles if you would like. Love watching you guys every week! You can can it. Just fill the jar within a half inch from the top and do the water bath method just as you would any other sauce or salsa.

I love your videos. I didn’t realize jalapeños turned red. Is it a special variety? I’m up in Ontario Canada and harvested my jalapeños when they were green and froze them. I wonder if I can make the same recipe with the green ones.

All jalapeno peppers will turn red if you let them ripen. The stores sell the green ones because they are more common. I've even had some of my green peppers turn red after I have picked them. If you make the sauce with the green ones it would have a different flavor but I'm sure it would be good.

Seed saving is good but why not dig the plants up and take them in and over winter them? Have a nice safe holiday weekend.

I think because you used white vinegar, you could put it in a water bath and can like pickles.

I was thinking the same thing. Id find a recipe for canned Jalapeno peppers and see if the ingredients are close then follow the canning times. Sara, I really appreciate that you follow tested recipes and don't just wing it! I was also thinking that perhaps it could be frozen in small batches.

Saving pepper seeds for assurance is a good Idea. But you can over winter your pepper plants with very little light, just cut them to about 5 inches tall place in pots water well. I label them and put them in the basement with one led light on timer, pluck off any flowers or peppers that form. I use recycled grocery bags laid lightly on the top of the soil so I don't have to worry about watering so much. I am in zone 6, so they go into the basement but for higher zones, a garage enclosed porch, shed, cold house will work too. You get tons more peppers per plant this way. I use one 2 ft long pot for about 7-9 plants, you are only keeping them a live, not growing them.

Hey Sarah. ;-) I was just wondering, do you think you could use just a little plain gelatine powder as a natural thickener for the sauce? It wouldn't mess with the flavor like cornstarch would and it wouldn't mess with your insides like xanthium gum may.

You should watch (if you do not already) Chili Chump. His love of peppers is great, but he talks about making and preserving peppers and sauce.

It will mellow out as it ages in the fridge. Mine lasts all year until I get next year's peppers. I mix half serranos and make a couple of quarts annually. We have one of those vacuum sealers with the jar attachment that works well. I also make a few small batches with some other hot peppers from India. Those will numb your face, but in a good way. ChilliChump on KZbin is also a great resource for hot sauce making. I'm currently trying his fermented sauce.
