Sorted food, this is perfect! All the ingredients and leftover baked sweet potatoes :) Going to vegetarian-ise it with sundried tomatoes ( the type that come with a herby oil in a jar) plus some smoked paprika I think to replace choritzo. Will let you know how it goes :)

I tried the recipe without the chorizo, and just added some Spanish spices on to the mushrooms and it worked out fine. I think haloumi cheese or paneer would be a good idea though.

How about doing malaysian take on sweet potato? 'kuih keria gula melaka' which is currently viral now in malaysia :). It's a dessert made with basically sweet potato mixed with flour, shaped into a doughnut, fried and then smothered in palm sugar yummms!
