at the book from escouffier, the name thermidor was reladed to "napoleon" who found the addition of engl. mustard (must have been quite hot) that the dish is a thermidor.

I wonder what the Lobster was thinking when it woke up after sleepy time dressed and ready to eat on Bruno's plate. It must have thought it was all a bit of a weird nightmare. I've only killed a Lobster once with this method (wrung a chicken's neck as a teenager also on my great aunt's farm in Ireland) I can't say I have the temperament for it though, but if you want to eat it you have to be prepared to do the dirty I suppose.

Bernardina Benavides Alvarez se agregó migas de pan, crema, mostaza, sal, pimienta, y la mezcla verde que se quedó de la langosta. Tomalley (hígado y páncreas) Roe ( ovario) y el líquido que salió cuando partiste la langosta al medio. Sé que está mezcla no suena muy apetitosa, pero tiene bastante sabor.

With seafood, white wine. Always white wine. Red wine for beef, lamb, venison, etc pork can have white or red. Sweet or dry depends on the flavors of the dish.
