Back to working on the log cabin suana, I finish the walls and place the top logs with porch extension to carry the roof and porch overhang. The weather is finally perfect for working on the Finnish sauna /Russian banya style bathhouse so I should be able to make headway this week, framing in the roof with full length logs.
In the morning on the first day, I prepare duck confit, placing salted duck pieces in a cast iron pot and covering it completely with duck fat. It simmers on the wood stove with a medium fire for over ten hours until it's fall of the bone tender. I eat the duck back for lunch, fried in the cast iron pan, and then for dinner, I remove the two legs from the confit pot and fry them in the cast iron skillet with zucchini, onions, mushrooms and garlic and eat it with fermented sauerkraut.
The following morning, I wake up to a lot of fresh snow, about 12 inches, thirty centimetres, over two days. I cook bacon and eggs for breakfast and then clean up and shovel the front deck before company arrives, which they do just before the video ends.

Cali: Great breed. I had mine for 15 years, got her as a pup and she was my constant companion. Right up to her last breath she was always good natured and very attentive. Great book by Helen Hoover. I re-read it about every 3 years to help keep myself more humble! I built a log cabin about 18 years ago at 9,100 ft. elevation. I worked all through the winter and had the privilege of shoveling snow out and around it 47 times. I like to wore that poor shovel out. Come spring we figured it had snowed 13 ft. that winter!! I really enjoy your videos Shawn, thank you for them. I live in the Smoky Mountains, having sold everything in California and traveling looking for a place simi apart from the maddness. I'm why on the other side of 60 now but I find a great deal of satisfaction being able to "really live" and be mindful of the process. I'm not that far from a major town but far enuff where I can go a month without seeing anybody. Get up stoke the fire in the morning hoping that I can catch the last bit of life in it, or start a new one. Playing my guitar, reading, cooking and always being mindful of where I am. Last week while we had a "heat spell" I planded over a hundred bulbs looking forward towards the spring. But you have taken it to a nice level. Living your life as if were a piece of Art. There is no question! Callie is the best! She has the best disposition of all the dogs I get to witness on the bushcraft networks. I have never met her and more than likely never will, but I love her to pieces. Sean, you seem to have it all together where you are, and I admire you for what you have done with your life. Unless you saw him talking well over a year ago about confit, you might not know why Shawn slow-cooked the duck in its own fat, nor why the uneaten parts are being transferred to a narrower pot. Wikipedia explains what it is: "Confit of goose (confit d'oie) and duck (confit de canard) are usually prepared from the legs of the bird. The meat is salted and seasoned with herbs, and slowly cooked submerged in its own rendered fat (never to exceed 85 °C [185 °F]), in which it is then preserved by allowing it to cool and storing it in the fat." By slow-cooking it at low temperatures for several hours, this tenderizes the meat as well as dissolves the connective tissues (releasing nutrients that otherwise would be hard to chew & digest--also dissolving those tissues is actually what helps tenderize it, and the fat helps keep it from drying out). By transferring it to a narrower pot, this allows the liquid to completely cover the cooked meat. The rendered fat oils will solidify on the top, and seal out oxygen and pathogens from getting to the meat, allowing it to be shelf-stable for weeks at cool temperatures (so long as it isn't broken into). Once opened (excavated, more like, lol) you just need to reheat everything to a simmer (low boil) to sterilize it and you can repeat the cycle. Zachary Fowler (Fowler's Makery & Mischief channel) just finished posting his 30 Days Texas Survival series, wherein he and Chris from DropForgeSurvival spent 30 days surviving pretty much on whatever they hunted or harvested. One of the things they did was to keep a pot of what they call "fish head soup" or "everstew" going, which was to put the bones and fat and scraps of meat into a pot with water, bring it to a boil every 8-12 hours, and let it simmer good and long, drinking the broth and picking through for scraps of cooked meat and fat. They put bits of everything in, whether it was crayfish, catfish, raccoon, rabbit, possum, etc. The principle is the same: slow-cooking extracts nutrients from normally less than edible bits, like scraps of skin, bones, cartilage, tendons, and so forth, as well as helps to render fat from its connective tissues. This helps to prevent malnutrition from lack of micronutrients and electrolytes in one's diet, things that can be extracted from those long-simmered items. Confit is similar to the everstew pot, which if covered while still hot, will seal itself with its own layer of fat, as well as slow cook nutrients into the broth and the fat from whatever meat and bones have been included. Cooking it at a hotter temperature will caramelize the meat and the fat, giving your food a whole different set of flavor and texture profiles (which is why Shawn double-cooked the duck legs in the fat after they had simmered all day) but will not actually extract micronutrients nearly as efficiently as a slow simmer. So it's good to know how to slow-cook foods as well as fast-cook them, for many reasons.
