HI Nattie. These are a very old favourite. Very popular when I as a child in the 50s. They were then just known as cheesecakes. But these days I have only seen them in Greggs. It is also difficult to find shredded coconut, but desiccated works quite well too.

My wife and I have been researching these for a few years. You can buy coconut threads wholesale but they come in half hundredweight bags. Some Asian cook shops apparently stock them. Checked out a few bakers when visiting London last month but no sign. Enjoyed your video.

HI Christopher. It is rather irritating that shredded coconut isn't readily available. But I was able to but a packet of sweetened coconut Bakers Angel Flake on a well known online site. It worked welll for these and I have used it in other recipes too.

I Used to buy cheesecakes in London from Kossof's Bakery in wood green sadly no longer there. They had a sponge & lemon curd filling which was delicious. I shall definitely try these but use lemon curd instead of jam. Nice video keep up the good work.😊

There is an old recipe in the southern US called Lemon Cheese cake. It's a layer cake and the lemon cheese is lemon curd. I found out that lemon cheese is an old name` for lemon curd.

Hi Geoff, just wondering why you don't use salted butter, instead of using unsalted butter and then adding salt.

HI Barbara. That is a good question. You can use salted butter and omit the added salt. However different butters/brands use different levels of salt so it is easier to control by adding it yourself. The salt is most often, in baking, used more to bring out the other flavours than for the taste of the salt.

Hi again Barbara. I just did a quick check on salted butter in one supermarket. I looked at 6 brands and the salt ranged from 1.2% to 1.8% which is quite a large range, so you can see that adding your own would give greater control.
