I had never seen it before myself. Honestly had no idea how it would turn out but it was among the top 3 I have ever tasted. Definitely going to do this again in the future.

Awesome cook! Can’t wait until my pit is ready. However, after seeing a few of your cooks, I’m concerned about how easy it will be to clean this pit or add wood/charcoal if needed while in use. Post a videos of the cleaning process please!

I have been cooking briskets on my WSM with a Fire board for a long time. can you show a video of running it more like an off set smoker adding a log to the fire baskit every few hr Thank you for an amzing smoker and video.

When you place it in a warming box, do you let the temp cool to a certain degree before doing so? For example, if the brisket is 202° when you take it out of the smoker, do you let it cool down to say 160° before placing in the warming box, or do you place it in right after pulling from the smoker at 202°?

No it wont fit with the hopper and the stack in the center. If we move it towards the front its rendered useless as there isnt enough space.

Yes smaller splits, half to third sized since your directly over the fire.
You messed up by not putting black pepper on first. Try again

If I'm dry brining all day (like this), I like to apply the salt first to draw out the moisture and then pull all the seasoning into the meat. And, given Chris stated that this was the best bite of brisket he's had, it's kinda hard to convince me that he messed up!!
