I'm Korean and I don't like the butter and lemon at the end. Naengmyun ( *sweet potato noodles - which are gluten free!* ) are the traditional noodles you use for Japchae. I don't think it looks that amazing or even that 'appetizing' in the end. I prefer the Korean way of preparing Japchae because all the ingredients blend a lot better with the glass noodles than classic Italian pasta. Pasta makes the dish heavy and the butter and lemon are just a complete "no no" with soy, fish sauce and sesame oil. It actually turned me off this recipe. NOT every traditional Korean dish needs to be "Western"- or "Esther"nised. I don't LIKE lemon so I would never use it unless I make Limoncello!
