I've been meaning to make an easy soba noodle video for a while now, as the noodles have a lovely flavour and texture all of their own, and they cook fairly quickly, making them a great carb to keep on hand for last minute meals. I guess the easy soba noodle recipes in this video are a bit like buses; you wait ages for one, and then three come at once!
I'll show you how to make three very different soba noodle dishes;
- Vibrant and zingy hot & sour salad that's perfect for warm days and light lunches
- Speedy tofu & vegetable ramen filled with delicious flavours and great textures
- Sticky soy tofu & broccoli noodles; a bold and umami powerhouse of a meal

Easy Soba Noodle Recipe Ingredients:
Easy Soba Noodle Recipe 1: Zingy Crunchy Soba Noodle Salad:
4 leaves Chinese Leaf (Napa Cabbage)
3 small Carrots
2 Spring Onions
1 tbl Fresh Coriander (chopped)
1 tbl Flat Leaf Parsley (chopped)
1 Red Chile
2 tbl Toasted Sesame Oil
½ tsp Lemon Chile Paste
2 tsp Mirin
½ tsp Light Soy Sauce
Juice of 2 Limes
250g (8.8oz) Soba Noodles (uncooked weight)
10g (⅓ cup) Toasted Cashews
(I also scattered over a handful of cooked edamame beans)
Easy Soba Noodle Recipe 2: Soba Noodle Ramen with Tofu:
225g (7.9oz) Extra Firm Tofu
2 tsp Chicken Flavour Stock Powder
75g (2.64oz) Babycorn
1 tsp Sunflower Oil (for toasting the corn)
3 small Carrots
1 Pak Choy
½ Avocado
4 Shiitake Mushrooms (dried that I rehydrated in boiling water; reserve water)
1 Spring Onion
1 tbl Superior Dark Soy Sauce
5 tbl Light Soy Sauce
2 tsp Shaoxing Rice Wine
1 tsp Sriracha
½ tsp Golden Syrup
480ml (2 cups) Boiling Water
½ tsp Chinese Five Spice
2 tbl Mushroom Water (see above)
250g (8.8oz) Soba Noodles (uncooked weight)
Easy Soba Noodle Recipe 3: Sticky Soy Tofu Soba Noodles:
7 spears Tenderstem Broccoli
1 tbl Sunflower Oil
225g (7.9oz) Extra Firm Tofu
2 tbl Light Soy Sauce
1 tsp Superior Dark Soy Sauce
½ tsp Fresh Ginger (grated)
½ tsp Vegan Gochujang Paste
1 tsp Golden Syrup
2 tbl Boiling Water
1-2 tsp Cornstarch Slurry (cold water + cornstarch)
250g (8.8oz) Soba Noodles (uncooked weight)
Quick Pickled Cucumbers:
½ tsp Chile Flakes
¼ tsp Salt
4 tbl White Rice Vinegar
⅔ large Cucumber
¼ tsp Sichuan Pepper

My channel is you watching the results of my 2am thoughts of “I wonder what would happen if I put A with B?” The answers lean heavily towards cake, and my ongoing quest to find a good meat substitute. I’m a vegan that loves animal products, but hates what’s involved; so I’ve dived headfirst into a rabbit hole of different plant-based textures and flavours. These are often the 1st time that I’ve tried a recipe, and I’ll talk you through why I’m using the ingredients and what I think happened when things go wrong.
Grab a vessel of whatever makes you happy and enjoy, but be warned; it’s messy here sometimes!

Teriyaki Noodles: kzbin.info/www/bejne/bZybk2R7ftOhb5o Recipes notes & Tips: - I’ve seen soba noodles in high street supermarkets/the big 5, but they’re MUCH cheaper in a Chinese supermarket; pay the same price, but for double (if not triple) the amount of noodles! - Oggs/Just Egg microwave method; take a shallow plate (this will make it easier to work with than a deep dish), and pour stripes of the egg substitute across the surface, leaving gaps. I tend to find that the mixture will spread and fill the plate, but it’s worth a go! I microwave for 1 minute, then go in with a knife and drag lines across the slightly set mixture. Ping for another 30 seconds to a minute, and separate the pieces if possible. Having space between each piece will help the centre to cook faster without overcooking the edges. Cook at 30 second intervals until fully cooked

Looks wonderful and it might be worth investing in a wok. Do you have the thing where shiitake mushrooms cause you to have more vivid dreams? If you enjoy the content a creator puts out (especially the up-and-coming channels) please take the time to help the creators grow. Direct financial support is of course the most useful but a like and subscribe goes a long way as does taking a second to share on other social media channels. Leaving a kind interaction in the comment section also helps, maybe a goofy emoji like 👩‍🍳or 🍽or a 👁♥🐈‍⬛ when one of the kitties makes an appearance. And take a few moments to sit through the commercials especially the ones at the end as that makes a huge difference on up and coming monetized channels.
