The Cathedral Knights, especially with the great swords, don’t do as much damage as many of the stronger Lothric Knights, but they often win because they’re so much more aggressive. They’re swinging their swords like 3 times for every Lothric Knight’s one swing. So they often win even when the Lothric Knight’s weapon deals substantially more damage per hit.

The issue with the Cathedral Knights with the Greatsword is that they have next to no recovery frames, maybe like 3 frames, but that's enough to just move to the next attack. Every enemy has recovery frames EXCEPT for the Greatsword variant of Cathedral Knights, it's most likely an oversight

Results of this surprised me, because throughout all of my playtime every variation of the lothric Knights were significantly more difficult than the cathedral Knights. The difference is that the lothric Knights can't roll like the player can though.
