Metabolic health (alongside fat burning and aerobic fitness) is a cornerstone of good health and longevity, performance in work, play, or competition. Low Carb Food is the key to improvements in metabolism and mitochondrial energy. Professor Grant Schofield is so experienced in practical lifestyle changes toward a low carb, fat burning metabolism, and his much loved published books, multiple job roles and career titles attest to his knowledge.
Jaimielle and Pete Jacobs loved interviewing Grant in this podcast, you are sure to enjoy this as much as appreciate the valuable knowledge he shares.
Grant is also very experienced with athletes, low carb, fat burning, and optimal performance and energy production, having been a professional athlete himself and researched countless hours in this field both professionally and personally.

Who is Professor Grant Schofield ?
Here in his own words..
“Hi, I am Grant Schofield, Professor of Public Health (Auckland University of Technology) and director of the university’s Human Potential Centre (HPC) located at the Millennium Campus in Auckland, New Zealand. My research and teaching interests are in wellbeing and chronic disease prevention especially reducing the risk and eventual mortality and morbidity from obesity, cardiovascular disease, and diabetes. I live by the motto “be the best you can be” and have a strong commitment to peak performance in which I also do consulting work.
I’m also the Chief Science Officer, and lead the nutrition education at Prekure. Prekure trains and accredits health coaches, and advanced nutrition coaches.
I’ve been interested in human health and performance for my whole career. I started in psychology, went into sport and exercise psychology, then into public health, especially physical activity, then obesity. There have been some twists and turns along the way, which are the reasons for why I do what I do - click here for a little story of my path.
I want to know how we can be the best we can be. This crosses disciplines such as biology, medicine, public health, and productivity management. The cornerstones are nutrition, exercise, sleep, neuroscience, psychology and wellbeing. In my blog, I cover these topics under the broad heading of the Science of Human Potential.

Volek & Phinney did a study of carbohydrate consumption in fat-adapted competition cyclists in a metabolic laboratory where they increased their carbohydrate consumption 1 gram per day from zero for 7 weeks. It was on the 47th day of their training regime that the cyclists started exhaling burnt carbohydrates.

The idea of insulin dropping during the night triggering poor sleep triggering higher cortisol triggering higher insulin is interesting. How might this impact children who have poor sleep patterns... and present with attention disorders/anti-social behavior and then end up on Ritalin (or like)... perpetuating the cycle ... invariably it’s the mother in a house who ends up with less sleep, while she herself is either managing other small children or is entering peri-menopause... ... should sleepless children who have attention disorders be checked for fatty liver disease and insulin resistance?
