Here's a tip to get a more crisp fathead crust: after you pre-bake it, put it on a wire rack and put that wire rack on a baking pan while you bake your pizza. It won't get sweaty and soft on the bottom, and you might find a little extra grease drips out onto the baking pan.

I do similar. Bake initially on both sides so they both brown nicely. Then cool on a wire rack to room temperature. This really helps with the sturdiness and keeps it from getting soggy. Once its cool, top and cook how you would any other pre made pizza crust out there.

I make pizzas with 2 using the 8 inch high fiber tortilla wraps (Ole brand) with shredded mozzarella cheese sandwiched between them. Then I use Raos pizza sauce and add my toppings as usual. I bake it in a 400 degree oven. The tortillas give you a crisp crust and each one has only 4 net carbs (made with 100% whole wheat & flax seed). It’s a fast and easy way to make personalized pizza for the family especially when everyone wants something different. These are the best tasting pizzas that I’ve tried since changing my diet.

Wesley I want to tell you a secret I have about fathead pizza dough. After you roll it out, sprinkle the top with a light dusting of almond flour and barely press it it with your hands. It makes it a little crispier. I've used this exact recipe for quite a while now and we love it.

I've made the chicken crust several times and absolutely love it. I'm thinking about trying it in the air fryer. I can't sift flour without saying, "sift ya'll". LOL!!!!

I have always added Italian seasoning to my pizza crust, even back years ago when I was using wheat flour. It adds so much to the flavor.

@@cassieoz1702 It is a blend of seasonings we use in Italian dishes, like oregano, basil, etc. You can make your own.....go to pinterest and look up DIY Italian seasoning.

Somebody already mentioned Joe Duff's pizza crust, I like it a lot because it uses protein powder in it, so it's a lot different than other crusts out there. I usually go back and forth between that one and the fathead crust. I made the chicken crust pizza last night, and I thought it was really good, and even my youngest daughter like that. Also, if you could make a coffee mug that says "sift y'all", I would totally buy one.

Joe Duff’s is our go-to weekend recipe! We’ve been making it nearly every week for the last couple years. We add some chipotle and other Chile powders for a little flavorful spice and we do more than a pinch of the other powders he calls for. Usually we’ll do one with Rao’s and pepperoni and another with Stubbs sweet and spicy bbq and shredded chicken. Yummmmmm. Do it Wes!!

Love ya Wes! Another tip beyond flipping the crust during the initial cook is to immediately transfer the cooked pizza to a cooling rack so excess moisture doesn't build up under the crust = more crispy!

I say it on every Flathead dough video..... skip the nuking and dump it all in the food processor. Makes a way better mix and crust! Thanks for the show down Wes! I'll have to try the chicken one. Got some of that Costco can chicken.

You could always transfer the finished pizzas to a cooling rack over a sheet pan to keep it from sweating on the parchment to help with the crispiness of the crust!

If you want a crispier crust, bake on a preheated cast iron griddle or large cast iron frying pan....will crisp the bottom while top cooks. And if not crisp enough, set on stove top and cook for a minute more to get bottom the way you want it. Works VERY well.

I always add Italian seasoning to my keto crust. Makes a huge difference. Might be easier to make the dough in a rectangular shape and cut the pieces in squares.

I learned that you can crumble up parchment paper and wet it and it sticks and works really easy when using it and putting it on or in a baking pan.

I am struggling with eggs right now and you're right, cheese in the crust and cheese on top is too much for my belly. And I can't have any gums or protein powders.... One of my favorite things to do is take long thin slices from medium to large zucchini, dip them in coconut or almond flour and saute them. Then I put all my pizza toppings on them, finish them in the oven and I really enjoy that. Even if I can't eat your pizzas, it's fun to watch you make all the different crusts.

Just made the chicken crust pizza. Outstanding. I did turn the crust over about halfway through the initial baking. When I took the finished product out of the oven I slid the pizza onto a cooling rack for a few minutes, then back on the silicone mat to cut. It is not soggy. Crispy and perfect. When I eat pizza I like that doughy bready texture and none of those have hit the spot. I have tried the chicken crust pizza and tbh it tastes like a big version of chicken parmesan. still looking for that bready pizza recipe but this was still a very informative video.

I’ve found using a pizza pan with wee holes everywhere key to crispier/ fighting the flop. Bought it by accident and wouldn’t sell it for all the tea in China now. Diet Doctor had an interesting shredded zucchini crust-you salt the zucchini, let it sit, then squeeze out the water. Add cheese, egg, baking powder and seasoning. Topped with pepperoni, kalamata olives, peppers and cheese, it’s scrumptious- but I haven’t liked it with other topping combos...

We use the chicken crust often. It is our favorite since it doesn't take long to make. We also add a bit of garlic powder and Italian seasoning to the crust. My youngest son, who isn't eating keto and HATES chicken, loves the chicken crust pizza. He has no idea its chicken.

I’ve been doing fathead pizza for a long time and I always put Italian seasoning, garlic and onion powder in the dough and it tastes exactly like regular pizza. I top with mozzarella and Italian cheese blend, pepperoni, Italian sausage, green peppers and onions, and fresh chopped basil after it bakes. So so good! But it’s definitely time consuming but so worth it!

I just wanted to retro comment about people’s thoughts about a pan that’s darkened from cooking. In my experience and life, we call this a seasoned pan.(much like a cast iron skillet where you work to build up a carbon coating that creates a slick surface that benefits your cooking) So popular pizzarias who create deep dish pans wouldn’t dare clean this off. I have what in my region is referred to as my biscuit pan, that’s darkened over time with use, and a couple other sheet pans, along with a darkened pizza pan. I highly recommend! (I actually have watched a Babbish epi where he was recreating a popular deep dish pizza recipe and started by seasoning a pan till it got this coating)

The best low carb pizza that I have had is a real simple one that I got from low carb friends ages ago and I added gluten to it. Some people don't want gluten or can't have it but if you do it is really good. Mix 150g of powdered parmesan cheese (other cheeses will work but won't be as good) with 15g of vital wheat gluten. Add one egg and mix well until it forms a ball. Grease a 26cm silicone cake mold. (I do it with a teaspoon of olive oil and spread it with a finger) Put the ball on the center of the silicon baking mat and begin flattening with the back of a spoon first by pressing and then by hitting it with the back of the spoon. It will take quite a bit of work to spread it until it covers everything mostly uniformly and there are no holes. (doing it that way develops the gluten producing a much better pizza) A smaller mold could be used to make a smaller pizza with a thicker crust and it would be less work but I like it this way. Microwave it for 5-7 minutes. The crust should at least begin browning a bit in the edges , the browning determines the crispyness . If there is any bubbles when you take it out of the microwave you can use the back of a dish to flatten then. Let it rest for at least 5 minutes and you can get it out of the mold. Now the base is done and you can add whatever you want to it. When baking the pizza you should put it close to the top of the oven with heat coming only from above as although the base can stand some abuse it will eventually melt. I have made it for non dieting friends and they loved it. Without the gluten it is tasty too but the texture will be much worse (won't have much crispyness) and it will be much less forgiving in the oven. Xantan gum or guar gum won't work here to substitute for gluten.

if you have a waffle maker then do something similar to keto connect crust 1lb of ground chicken 1 large egg 2 tbsp parmesan cheese mix all that together with some salt, pepper, garlic, and basil and then put half of that into a waffle maker and after it's done cooking sauce it, top it, and put it in the oven at 425 for 5-10 minutes. this is kind of my recipe but it is the best pizza substitute I've found, you can eat both pizzas for not a lot of carbs, and it's perfect for omad because it is HARD to eat all of it and it's only around 1,000 calories for both

I also think the chicken crust pizza is the best. I shred it up in my small food processor so that it presses together really well, and because I love barbecue pizza I use sugar-free barbecue sauce instead of pizza sauce. (Sweet Baby Ray's if I can find it, but G Hughes is also really good.) Then my cheese and mushrooms. The tip about letting it cool before baking it the second time with the toppings really helps too. Yum!

Perhaps place your slice in your air fryer for a couple of minutes to crisp. That’s how I reheat my leftover pizza and it works great.

Yay this is so fun! My favorite pizza recipe that I’ve tried so far is the Low Carb Yum Deep Dish Pizza(which I don’t think is actually very deep dish, definitely not thin crust but more of an average pan pizza). I add a bit of yeast to give it a more pizza bread flavor. Low Carb Yum’s Fathead Breadsticks are also amazing, totally tricked my whole family into partaking in a keto treat. I will say on a day to day basis, that recipe seems like too much work. When I’m craving “pizza”, I’ll use the Cheeseisthenewbread Cheesebun, to save on calories and time since it’s easier to make ahead and freeze though I sometimes detect an eggy flavor. Sometimes I’ll even use her slightly modified fathead recipe which is basically the regular one but with no cream cheese to save on calories.

Awesome video. Everything you said, and your ratings for each pizza was exactly what I was thinking. I, personally, just prefer the chicken crust, and I add the Italian seasoning to it to bump up the flavor, and add some almond flour for the healthy fats. Also, to my pizza sauce, I add spicy guacamole to get the healthy fats from the avacados. Looking forward to Part 2!!!

Chicken crust for me, hands down after trying all others. I actually put the drained canned chicken in the VitaMix w/other ingredients including Italian seasoning then grind it up. Roll out between 2 pieces of parchment then bake on air baking pizza pan ( one w/holes) 400 for 10 minutes before I top then rebake. BTW How many carbs should be a category.

Hi!!! New to your channel but loving it! Do you think for the chicken crust if you put it in a cast iron pan and fried it on both sides, then put toppings on and put it in the oven it would come out less limp? Would you want to try that? Again, loving your channel!

I finally won the battle by returning to flour, specifically organic bread flour for pizza crust. Had it last night was wonderful. I did strict keto for a year and got so sick of keto bread alternatives especially for savory recipes. There just is no good alt. Works great for desserts though. If I went back to strict keto again I would just do the pizza casseroles.

I don’t really like cauliflower..but I was trying different crusts one day and stumbled onto “Chef Buck”.. this guy is funny..but I have to say the texture was good.. just so you know the crust is gonna be “floppy” but the flavor was good, I put Italian seasoning in the crust.. I hate pepperoni so I use a link or less of Italian Sausage in my pizza.. I removed the casing break it up and precooked it .. you can add thinly sliced onions or bell pepper 🫑 and they bake up great! Can't wait for part 2. I tried the chicken crust pizza and didn't like it at all. I sometimes layer the toppings in a ramekin and bake it until bubbly. I used to make a cauliflower crust that was pretty good.

My favorite is Suzanne Ryan's Quick & Easy Personal Pizza (fathead) from her 1st (keto) cookbook, "Simply Keto". It's 7.8 carbs for the entire pizza...which is a single serving, which could easily serve 2.

I shred my chicken much better than you do, so that it dries out better. I also roll it out much thinner. I can get it to fully cover a regular cookie sheet. For an inexpensive and low carb sauce, I use about 2 Tbsp tomato paste (no sugar), water, garlic powder, and lots of Italian seasoning. For toppings, besides the pepperoni and mozzarella you used, I like to add some combination of cheddar, parmesan, ham, spicy Italian sausage, sliced black olives. Thanks Wes

Oh weird, the chicken crust pizza I made used raw ground chicken spread into a pan, baked, then topped and baked again. It was honestly better than a lot of wheat pizza's I'd had, but it was a lot of work to make :(

Maybe next time one of your rating categories could be "bang for your carb buck" - not sure how to make that start with a T though I.e. the chicken pizza you get to eat the whole thing for 1 carb, vs the almond flour one you get 1/8th for 3 carbs each h that makes me want the chicken one over anything else, regardless of the other ratings!

You should try King Arthur's Keto flour for pizza or bread. I haven't tried it, but it sounds interesting

The first one when I tried it tasted so strongly like canned chicken and nothing else, I usually don't waste food as long as it doesn't taste disgusting but I had to throw it out, it was nasty

Oh, no! I cannot taste the chicken AT ALL if I use 100% white chicken breast packed in water. I can taste the chicken if I use dark meat, mixed white & dark meat, or chicken packed in broth instead of water. Those can really amp up the chicken-y flavor for me.

Use organic chicken breast and make sure to get all the moisture out. Can hardly taste the chicken at all that way. Especially if you season the dough with a little Italian seasoning and nutritional yeast.

I make it with ground chicken. It has to bake longer since it's raw, but I don't notice any chicken taste

Great video! I like a thinner, crispier crust for my pizza so I substitute out 1/4 c of almond flour and replace it with 1/4 c of oat fiber in the fat head dough. I don't even have to prebake it :)
