[Low-carb, Tasty, Easy] Nori+Shiso Gyoza!!!

Some juicy chicken breasts and a mountain of shiso, all wrapped in nori. The Nori+shiso gyoza.
No overeating here.
■Ingredients for 15-20 gyoza
200g Ground chicken
70-80g Chicken breasts(Use about ⅓ the amount of the ground chicken)
2 stacks Shiso leaves(or even 3. Just use tons of them)
1 tsp. Garlic
1 tsp. Ginger
½ tbsp. White dashi(Each brand has a different sodium content, so when in doubt use a small amount. You can always use more sauce when you are eating the gyoza.)
*If you don’t have white dashi, use
1 tsp. Soy sauce
1 tsp. Cooking sake
1 tsp. Dashi powder
2 Egg whites(Apply the york to the gyoza when you eat them)
■Egg Yolk Sauce
1 tsp. Sugar
1 tbsp. Soy sauce
1 tbsp. Mirin
Microwave for 60 sec. at 600w with no lid.
*In our videos we are treating 1 tbsp. as 15ml and 1 tsp. as 5ml.

Was the yolk raw or was the sauce heated to poach the yolk in that one sauce?

i dont know where to get Shiso leaves where i live so im wondering what could i use instead. i read that Shiso leaves is Japanese Basil, could i use Basil in stead ?
