I'm glad you are showing us what Nicoise Pasta is. I almost ordered it last week @LPV but was hesitant. Lol You are correct.. I thought it was tuna pasta initially.

I thought pasta water is used because of the starch content which helps thicken and emulsify the sauce to help adhere it to the pasta. Never heard it’s used because it adds more pasta flavor. Good recipe though!

For some reason when I read the title I was expecting a rift on a salad nicoise. Kind of a let down. But still looks great! No shade.

Chef LL. yo Amico Mio since you said you are part Italiano you need to know that the pasta water is not used to make the pasta taste more like pasta, But it is used to help tighten up your sauce by imparting the starch from the pasta.. Most velcome, prego Mon Ami.. MB
