Traditionally saffron was grown in abundance in France and France’s connection to great seafood has been renown for centuries. The saddest thing about peasant food is its commodification in capitalism. This dish is a testament to a people that created amazing food with only what was readily available. They thought far more like chefs do than home cooks with a bookshelf full of cookbooks today. Which is why chef Ludo didn’t make a traditional bouillabaisse. He adapted the recipe to fit the situation.
