You should use sushi grade fish for ceviche, the acid will kill bacteria but not parasites. Fresh fish can still have parasites.

Ceviche is one of my very favorites and your version looks wonderful. A very minor point of disagreement with you Chef Ludo, but I would only use red onion in this recipe and not substitute another kind. If I'm going to take the time to clean my juicer, I may as well also take the time to get the best kind of onion for this recipe.

this is not ceviche. This is a salad. Try making peruvian ceviche - much more defined flavors

@@fullmoonsociety7463 Peruvian Ceviche is the original recipe. Calling it "one kind of ceviche" probably means you have not tried it. These type of alternative ceviches are always underwhelming

I love your videos chef ludo ! But I totally disagree with that ceviche.. never use vinegar for a ceviche. Only limejuice, don't use cheap jalapenos, use good peruvian Chillis like Aji Amarillo, Aji Roccoto, Aji Limo. These Chillis are the beste for a ceviche. And if yiu ever heard of "Tigermilk" or " Leche de Tigre " then usw this for your ceviche as a base for your cucumberwater. Look up for Maido in Lima or the Restaurant Mercado in Vienna. They make good Ceviches !!
