Your videos are Top Shelf cooking and awesomely high production quality. They need more views so other people know just how awesome this channel is. Please keep at it with these videos Ludo. You’ve certainly upped by cooking game as I’m learning a lot from everyone of your videos in real fundamental techniques. To me good techniques are just about everything and right up there with quality ingredients.

The amounts of some of the ingredients Chef Ludo is adding to the stand mixer seem to be WAY MORE than the recipe on his website indicates. Was he making a greater quantity of the compound butter here, as well as in the Mind of a Chef bonus video? Website recipe: ½ pound Plugra Butter (softened); 6 each Garlic Cloves (chopped fine); ½ each Shallots (chopped fine); ½ Tbsp DRY White Wine; 1 oz (by volume) Parsley (chopped fine); 1 ½ tsp Kosher Salt; ½ tsp White Pepper (ground); Pinch Nutmeg (ground).

Actually, WalMart has them. They are canned. Larger WalMarts even have an escargot kit with a can of snails and the shells together.

@@criscoulter4405 you are fortunate... Try giving them a carrot or celery for a few days or even parsley, cleans their system before you cook them plus it flavors them a bit too

nutmeg?? first i hear of this in escargot butter ,,and yes i can eat a shit load more than ludo,,i harvest my own and have easily eaten over 100 in one session,,of course they are smaller variety than the french ones but i can eat as much of those too

instead of just parsley maybe use a bit of coriander or all for a different taste
