I've been making an Americanized version of this recipe for 30 years. It was originally given to me by an elderly woman. She was not a grandma but she had some great recipes but couldn't do much cooking anymore. I think the original recipe was for chicken but I've also made it with pork chops which I am doing today. I don't use creme fraiche but I do use beer, onions and some chicken broth. And then I make a slurry to thicken at the end.

After 40 years of family saying we were Scottish and German because those are the white people who settled my part of Texas, 23andme advised that I am, in fact, 60% Irish by volume. Also, I lack the known genetic factors for breast cancer (what I actually took the test to learn) or Alzheimer's (very welcome bonus information.) The other thing is if you keep checking back, further research broadens the results.

They basically only cook this in central France, in Brittany/Normandy they would add cider or calvados. Has absolutely nothing to do with Belgium.
