Georgian inspired Zucchini Ikra Ingredients:
Zucchini 3 lb
Carrots 1 lb
Bell peppers 1lb
Onions 1.5 lb
Hot peppers to taste
Garlic 1 head
Tomato Paste 3-4 Tablespoons
Paprika 3 Tablespoons
Salt 3 teaspoons ( to taste)
Black pepper 1 teaspoon
Sugar 2 tablespoons
Olive oil 1/2 cup
Vinegar ( 5%) 1/2 cup

I did not know that Ikra is the name of this dish. I also now Ikra only as fish eggs: Thank you for sharing. Cheers

Ikra! New word for me! I only use zucchini for cake. I dont grow them, as i have never found them of interest. But! I CAN see myself like this! Thank you for sharing.

I love the way that you explain things, it really helps a lot. By the way, I don't know much about my father's background, he was a Mennonite, but he did mention "the Krim", am I guessing that was Crimea? He talked about melons and squashes, both things totally unfamiliar to my mother's German family. Oh, and corn, ha ha. "Pig food," they would say, but he showed us how good these things were. Very glad that we are safe in Canada now.

Krim is Crimea! Yes, during the era of Khrushchev, everyone was forced to plant and grow corn, even if it was not the right climate. People hated corn. My papa tells me stories of people had nothing to eat but corn.

I have problems with my knees, so standing for an hour wasn't going to happen. After I got the ingredients all stirred around in my cast-iron pot, I transferred it to my big crockpot to cook at its own pace, and I can rest in the meantime. Just the tomato paste needs to go in yet. Can't wait to try it. I will cook up some rice (maybe add some of my canned black beans), and that will be supper.

❤ my chopper at this time of year. It makes big jobs so much faster and is not hard to clean up at all. I don't use it so much for day to day cooking

I'm going to try this. My zucchinis are overdoing it this year. Think I'm going to pressure can, though. Just because I would feel better about it.
