I think it’s important to note that the variety of marigold that is better suited for consumption are French marigolds (Tagetes patula) or even better, signets (Tagetes tenuifolia). Also, pot marigold aka calendula officinalis is what is referred to as “poor man’s saffron” not regular marigolds from the Home Depot. If you find it to be bitter, it could be due to not trimming off the stuff behind the petals. The white and green parts of the blooms are not tasty. Maybe canning them mellows it, I don’t know. This is an interesting idea for marigolds. I just felt like not enough information was given about what type of marigolds are best suited for eating. Not all marigolds are edible or tasty.

Yes, but not all. Some marigolds from home depot are not the one. Someone in the comments wrote that the French marigolds are the substitute for saffron.

Usually Slavic style tomatoes are canned with dill, horseradish and garlic. But this recipe will have a very different flavor and aroma.
