All wrong and your points prove that you know little about knife sharpening. 1. Apex have nothing to do with sharpness. It’s all about the thinness and the angle of the edge. 2. Only bad knife sharpeners create a burr on the edge. 3&4. Just get to the angle of the edge and thinness you want with the lower grit stone, then make edge more solid without the v grooves by polishing with more higher grit stones. 5. Not all knives are straight with a smooth profile to begin with. Most profiles are ruined by the user using the honing steel, not from sharpening on a stone. 6. You know little about asymmetrical knife angles. A brand new knife (a good Japanese non traditional knife) is mostly 50/50 with a very small micro bevel ( less than 0.5mm around 5 degrees per side). The user like that same micro bevel and angle on one side (same as single bevel knives), so they mainly grind away more metal on the other side and end up how they are. Since there are some benefits with that grind, some manufacturers’ knife came with that kind of bevel.
