今日適逢冬至，先祝大家團團圓圓。冬大過年，雞絕對是做冬的必備菜式，今集《筆記紙》戰狼和大家訴說一隻雞的故事。在大圍有一間奇店，38年來獨沽一味賣雞，外型跟一般豉油雞無異，竟要客人早兩小時前致電預訂，一隻雞價錢亦不便宜，盛惠320元。不過舖頭賣雞卻不見雞，門口貼滿老闆自己寫的中醫理論，堪稱奇檔。梁虹光用大半生研究創出百寶雞，由於爸爸和爺爺兩代人是中醫師，除了八角、桂皮等滷水香料外，還用上十多種其他香料浸製，每朝會將浸製醬料去除雜質加上新香料熬製，將雞洗淨後，便放入浸製20分鐘，然後 ，吃時可拌上自家調製的沙薑汁。梁虹光一生大起大落，年輕時希望創一番事業，曾在黃埔開分店，90年代亦在內地開連鎖店，可惜最後失敗，最終退守大圍小店。今晚8時《米紙》首播，大家吃冬至飯時一起睇首播！到時見！

我係大圍人，記得剛剛出嚟做嘢，出咗糧就想去出名嘅百寶雞比阿媽加餸。去到又覺得有啲貴，個心好驚比老闆串，點知老闆又好Nice，介紹我食啲乜，當日買咗咩已經唔記得，但係老闆嗰份親切我一定記得。後來一直都有幫襯佢，直至我搬離開咗大圍。呢幾年偶然聽到老闆嘅言論，真係打從心底裏敬佩呢個老人家。希望老闆去到邊都事事順心，一家平安健康。

There is a irony to HK. Two forces fighting against each other. I want life in HK to be back to the 1980s. When people were more free... honest... and clean. That is, they don't cheat you for selling you a DIRTY chicken !!!!! F!ck... Do you know that, even in the UK... bureacracies have reached an all time high ? Watch this video. This "young woman", in wanting to meet ALL requirements... are cooking those breakfast cereals... that is, they are already cooked. She is cooking it for the third time. If you do not eat carcinogenic materials.. by the time that she finishes.. Then this is done. You do not need to cook it again. Cooking something and recooking it for like the second to the third time.. you are creating carbon... and it is starting to become carcinogenic. Love this Uncle's hardwork. Appreciate his work. Cos it is not easy to be raising good food and good materials. I think people are forgetting that pollution has entered the food chains. Being "Green" in HK... does NOT actually mean, no pollution... or no dirt... and it is NOT about making something from laboratory... But reducing, or cleaning back up the sea, the waters.. That is a good start.

This is why we are against certain people.. but Mr here has been clean... His heart is in the right place. Youngsters only think about the pricing. Or to find other methods to cook. Instead... this is what they are doing... Why ???.... I cannot believe that, this is like this. Be good, stay healthy. Look after the good elders. Their hearts are to see a generation of kids, risen from ill health... and food is enough. There is enough for everybody. Just make sure that it is clean. I even share a meal sometimes... Every day, just 3 meals a day. It is not that bad. So.... Money is not everything when you do not have the health system to protect you... Reason why the US had always supported PRC or China.. it is supposed to be doing better.. but in the chaos... who is really helping others? Not that helpful to serve.. sewage oil.. for the sake of making money. Is it ?

Am going to try and share it with friends and have some meal together. I hope there isn't any maids coming here to try and seduce you while your family is away wor.... I will come again tomorrow lah." THAT is what you should say !!!! Don't you know how to protect the elderlies ??.... OMG...

One thing that I do not understand is that, why this generation's interviewers are so rude to him. The people who he may find connection would either live abroad... (Like my father's generation....) Or that they have moved elsewhere. Cos frankly.. he is very honest. He just speaks of the history. Maybe cos HK has in recent years.. around the last 20 years.. have seen people go in, and go out again.. He is one of the few few real locals locals. I am too. My father moved to the UK in his working life, but he started to work in actual restaurants in HK first. The ones that were quite seen as "high class" for that period of time. Even before he moved abroad. Whereas my grandfather came to the UK back then... post war period. If people are interested and why they want to know why this gentleman is not "crazy"... Then please watch this too. Maybe Fiona & Co.. and team. Very very quickly. Just to keep that financial machine going.. but humans are humans, we want belonging, connections... food, and shelters... That London industrious place was... where most ships from HK also docked as well. And people worked in those factories... and then those steels.. go into buildings and structures in all of the old commonwealths. Malaysia. Singapore.
