this channel has been a HUGE lifesaver for me. I moved to a new city for uni and trying to cook lots of healthy food under a budget was really tough. Thankfully, the chinese grocery store nearby has really good deals on their vegetables. I've probably cooked about a quarter of the things on this channel but theyre always super tasty haha. Thank you for making such awesome and accessible content!

Hi Lau family! I’ve just finished working my way through all of your old videos and they’re terrific. Not only have I made some great Chinese food, but I’ve picked up tips from Daddy Lau that have made my western cooking better, too, and I can’t thank you guys enough. Do you guys have any plans to do chicken in garlic sauce? That’s my all-time favorite American Chinese restaurant dish but I haven’t had any luck with any of the recipes I’ve found online. Anyway, just wanted to say thanks and good work!

Don't eat fried squid on the lunar new year celebration. It's superstitious because fried squid is a phrase for being fired.

As a Romanian nothing to do with China so far away... he is literally what I think about a Chinese person his face can be on the flag for real ! Hard-worker resilient passionate dedicated family centered humble but royal at the same time serious intense and a bit funny as well ! all those words came to my mind also many years ago as a child watching my first Jackie Chan movie ...

as a chef I have always used other peoples recipe as a guide line taking in new ideas and developing them into my own style but for some odd reason I am terrified of changing Daddy Lau's recipe lol. having this much respect for someone I have never met is weird, it's just weird...but yeah huge respect to Daddy Lau

We used to have a hotpot that did spicy crayfish, i must say that spicy crayfish heads are the only thing I can think of that's a little bit better than shrimp heads.

I love Salt & Pepper squid, shrimp, pork - pretty much anything. I eat the whole shrimp, heads, tails and shells. They fry up crispy. I think maybe somewhat smaller shrimp are easier to eat whole. I always use Szechuan pepper for Salt & Pepper dishes.

The shell is tasty. It has the flavor of the marinade and the texture is a little harder than a fried pork rind.

You tell lies about your shrimp. If the shrimp granddad was using was headless, it would indeed be 26/30 or maybe slightly bigger at 21/25. But since the shrimp for the dish was head on the size is 20/30. 😂

Monterey bay aquarium arbitrarily attacked Maine’s lobster fishery, which is sustainable. They placed lobster on the do not eat list, and were sued. Whole Foods no longer uses this aquarium’s listing.

the main reason i don't like shrimp dish is restaurant chef didn't clean the vein and shell. taste like you're eating plastic. and it's harder to remove the shell after the shrimp is cooked. like, how tf they learn culinary skills and had the audacity to sell food to people? it's way better if i prepare the shrimp myself. for example if i were to cook seafood fried rice i want my shrimp peeled and seep thru rice. because I don't want to bite shrimp shells on my fried rice. it's like you're eating plastic.

He didn't cleaned the inside, so you'll also eating the shrimp poop. The bigger the shrimp, the bigger the poop.

Yes, we do. However it depends on the type of shrimp and cooking method. In many cases the shrimp shell is not suitable for eating.

Question: I've eaten something called Crystal Shrimp where the shrimp is fried, shell-on, and then eaten as-is with a light dusting of salt. Is it similar in prep to s&p shrimp?

I know classic salt and pepper shrimps usually have the head on, but I would recommend using shrimps with the head off. The moment a shrimp dies the head starts excreting enzymes that break down the meat. This occurs even when the shrimp was immediately frozen because of the thawing process. The enzymes turn the meat into that unpleasant powdery texture I'm sure you've tasted before.

I find it fascinating that different Chinese languages sometimes have different homophones. I'm sure this leads to different types of food being auspicious (or not) depending on which variety of Chinese one's family speaks. In Mandarin, for example, shrimp is pronounced _xia_ / _hsia_ , which unlike Cantonese, doesn't resemble the sound of laughter.

Depending on how far back the head was trimmed, the gritty gastric sac may or may not be removed. It should be gently squeezed out from the head together with the gut.
