As iconic miss Gemma Stafford is, I can't be the only one that has no interest to cook a cake in a microwave or eat it out of a mug every time I don't feel like committing to making and finishing a full size 8-inch cake. Make this mini earl grey cake for the chance to try out a new flavour and get the full cake making and eating experience, but without the burden of having to deal with a cake very much not intended for one person.

INGREDIENTS
Earl grey milk tea:
65 g (1/3 cup) milk
1 tbsp ground earl grey tea leaves
Cake Batter:
1 egg
45 g (3 tbsp) white granulated sugar
45 g (1/4 cup) flavourless oil
50 g (1/4 cup) milk tea
50 g (1/2 cup) all purpose flour
10 g (1 tbsp) cornstarch
¼ tsp baking powder
¼ tsp baking soda
Pinch of salt
Frosting:
1 tbsp earl grey tea leaves
160 g (2/3 cup) whipping cream
2 1/2 tbsp white granulated sugar

I love Earl Grey, I've had macaroons, crepes, mousse, and milk tea made from it, haven't tried cake yet, thanks again for another great recipe video.

Oh that looks so good. I wasn't aware of there being actual recipes for reduced sizes. I usually spent time math-ing out the reduced amounts so I can have cake myself. These are the best single person living at home recipes I never knew existed but now need in my life. Thanks!

You have no idea how happy I am to hear that!! No more splitting a recipe and debating whether to use one egg or two when the full recipe calls for 3 because I don't wanna deal with half a leftover egg... I also have a series on single serving meals I think you might like!

Me too! I developed this recipe so that there's a little extra to keep in the fridge for the next day or two. Not sure if it would be worth it, even for me, to spend so long on a cake just for it to be gone instantly😅

you won't have the extra strong flavour the specks of tea adds to the cake but you sure can!

What a lovely cake! I know that you pass the milk mixture through a sieve so there aren't any tea leaves from that step...I can't seem to see where you incorporate the earl grey tea leaves into the batter? I noticed the final batter does have those specks. Did you add some more tea leaves with the dry ingredients?

I didn't add more tea to the batter! The specks are created by grounding up the dried tea leaves so after steeping and straining there are still tea leaves remaining in the milk tea that gets added to the batter as you can see in 0:49😊

you can! the butter will just solidify in the fridge so the texture of the cake will harden slightly compared to using oil

Most likely yes! You can also remove the water bath once the cake batter has set and then bake until the cake browns (this might speed things up a tiny bit)

if the cake didn't rise enough then it may have to do with your leavening agents, make sure they're not expired!
