While watching your video I had the thought that maybe a vacuum chamber would suck out the moisture from the eggplant. Might have to try. Got over 100 eggplant plants in the garden, but stir fry is the main way I eat them. As well, I really don't see the need to imitate the look and taste of meat. I have a gluten recipe that took 20 years to perfect to my liking. Doesn't exactly look or taste like steak, but it tastes good to me however I prepare it. Keep up the good work.

This was great! A few years ago I watching an Avant-Garde video and Gaz and his crew went to a newer Gordon Ramsay restaurant. They were doing a menu for this veganuary thing, which had a beet wellington on it. That looked amazing, so I decided to make it at work and the customers went nuts over it.

Thought you might like to know the likely reason the almighty algorithm stopped promoting your videos. Apparently it wants you to make shorts. Someone must have told it to push them and now, with it's infinate wisdom, it's found a great way to do just that. Channels that aren't producing shorts are being dropped off the radar on mass, regardless of anything else they may do. Hope that helps.

I mean, it needed to happen, right? :D After that steak fail on his part, this was just inevitable! I watched Merel's video some time ago and I must say, it was very impressive but eggplant just has... well, an eggplant texture XD No matter what you do to it, it is either spongy or slightly mushy so there probably is a better vegan substitute for the beef part, (like seitan ;P). But I am glad you enjoyed the end result so much! The concept of a wellington works very well with a butternut squash too - definitely not beef-like but super tasty! . Anyways, lots of love for you and the cure dog in the background! Stay safe and have a great rest of the week!
