Ingredients:
4 eggs
1 chopped onion
1 chopped potato
1 chopped tomato
1/4 cup chopped fresh mint
Salt and pepper to taste
1 tablespoon vegetable oil
Instructions:
Heat the vegetable oil in a non-stick frying pan over medium-high heat.
Add the chopped potato, onion, tomato, mint, salt, and pepper to the eggs and mix well.
Pour the eggs into the pan and cook for 3-4 minutes or until the omelette is set.
Using a spatula, flip the omelette over and cook for an additional 2-3 minutes.
Remove the omelette from the pan and place it on a serving dish.
Garnish with additional chopped cilantro and mint, if desired.
Serve the Afghan omelette hot with bread, naan or pita and enjoy!
