seeing as the pecans are not cooked, I would toast my pecans first so they had a better texture and taste like a pecan pie. Definitely will try the recipe and bake the crust vs microwave. thank you for doing both versions to save us from trying!!!! :)

Before you 'cook' your pastry, prick the bottom of your pie crust with the tines of a fork. It's called 'docking' and prevents the pastry from puffing up😊

I just made a really good pecan cheesecake. For the crust, I used equal amounts of butter and almond flour, adding about 1/4 of chopped Pecans, and I sweetened with a swerve about the same amount as the butter. I did not bake it. I just mashed it into the pan and put it back in the fridge. It was great! For the cheesecake, i mixed a package of cream cheese with 2 cups of whip cream with a box of cheesecake flovored sugar-free jello, whipped until thick. After the pie was chilled, I melted butter with a little Agave vector, vanilla until brown, and added powdered swerve and roasted Pecans. This went on top. This pie was SO SO good! I also added salt to the topping.

Beth, when you say you added some of the pecans to your crust, do you mean you ground it up and mixed it in, or did you mean that after putting the almond flour crust in the pan, you sprinkled 1/4 of the pecans over it? @cherylh4688 I chopped about 1/2 cup of Pecans and combined it with the Almonds. As for the recipe, I used cheesecake flavored jello pudding (I use sugarfree) and I mixed it with half a large block of cream cheese blended with 2 cups of whipped cream. I used an emersion blender to mix until thick. The topping was just melted butter and sugarfree powdered sugar mixed with toasted Pecans.

This gives me an idea for an Almond tart I love to indulge in during the winter months, I think it's a German (that general area of Europe) dessert. The almond filling is cakey like your crust here, with a bit of raspberry puree and layered with almond slices. I'm totally going to try to do that with this crust recipe. 🥧

Just a suggestion. I used ground-up walnuts with some Almond flour to make some of my crusts. It turns out better. It's the same crust I use for my cheesecakes.

You said your dog got skunked. There is a perfect recipe online for this problem, only 3 ingredients. One quart hydrogen peroxide, one teaspoon dawn dishwashing liquid, and 1/4 cup baking soda. Mix well, apply to dog’s coat, and massage well. Let it sit for a few minutes, then rinse. Does not hurt your pet and COMPLETELY removes odor. If any order remains, repeat process. Our dog loved to chase skunks, so we used this numerous times, with excellent results. Take care. By the way, your channel changed our KETO lives, especially the chaffel recipe. While you're cooking your crust, i think I'd lay the pecans in a med-low skillet to get them lightly toasted. They should be lightly toasted within 3-5 min. 🧁 I couldn’t find a pie emoji so I used a cupcake. Pecan is actually the easiest pie to make of all the pies. I do always make mine in the oven but other than preparing the crust, you just dump the rest of the ingredients into a bowl and mix them all together, folding in the pecans last. Then put them in the crust and bake between 40 and 50 minutes at 325. I will eat pecan pie any time of the year. It’s ambrosia to me. ❤

I agree, paper towel absorb the oils. I use a sandwich ziplock bag to spread butter or oil which also keeps your hand clean. ;-) Hmmm....where is the egg?

@ . You don’t need a microwave. Actually, they shouldn’t be used to cook food. I have one but seldom use it. I’ve never popped popcorn in it and never eat it at someone’s house who does. I sometimes use it to reheat something like soup…..on very low (3%) for about 5 minutes depending on the size of the bowl.) But usually I reheat in a small pot on the oven burner. (Popcorn kernels popped in refined coconut oil in a pot is the best!). Other then that, my toaster oven does everything I need when it comes to small items I don’t want to heat the big oven up for. So I agree with you. 😜💥

I always watch till the end. That said, I'd toast the pecans either in a skillet or in the oven. You can use them in this recipe, or for an addictive snack, sprinkle a brown swerve and salt mixture while the pecans are still warm.

Try a shortbread crust with coconut flour, melted butter (or oil) and some maple syrup. Blind bake for about 10 minutes or so. Then add your filling and bake as normal covering the crust edges so they don't burn.

Since you're using a Joe Duff recipe for the pie I have adapted another of his for the filling. I make the pie crust which is very nice then use his pecan praline recipe for the filling. It makes more filling for the crust and actually looks like a pecan pie. Also, it's delicious!

Don't put things in the centerr of your Microwave the cooking is most intense in the center so when you center your food you are more likely to burn the center of your food and have uncooked out sides. It is why your turn table turns. If your food is off center your food gets evenly cooked.

Yum. I make real pecan pie for Thanksgiving. I toast the pecans in butter & salt beforehand. Usually 8-10 min 350° oven. Stir halfway. Watch closely so you don't overcook them. Ovens vary so much. I toast walnuts in butter & salt too. Again watch closely. You won't believe how much better toasted nuts taste even in cookies. I use some vanilla &rum. Now I can have some keto pecan pie! Thank you!

I'd work more on the crust for this recipe, reinforcing the Almond Flour with a bit of Coconut Flour and Golden Flaxseed, then docking it (as suggested previously). I would also cut back on the granulated Sweeteners to enhance these natural flavors rather than mask them. Of course, that is a matter of personal taste.

Just spotted Charlie in the doorway❤ Since you aren't baking the pecans, maybe toast them first? Always add a little salt to sweet things, not necessarily to taste the salt (though sometimes yes enough to taste). S talt brings out the flavor. Mom told me that at least sixty years ago.🥧
