I make custard in the microwave. I use heavy cream instead of water and mix my sugar substitute right in. The trick I do that makes it come out so much nicer without risking it blowing up is to put the ingredients into a blender cup first to thoroughly mix and then transfer to microwave safe cookware. I microwave it for one minute and then transfer back to the blender cub. Then repeat for 30 seconds at a time. You'll watch it thicken and get smooth and creamy. I go back and forth about four times then transfer to individual serving bowls. Even with the additional putziness of transferring, it still goes really quick and improves the result.

Fish sauce makes a good umami additive for future reference. Pretty easy to find. Also, technique tip I got from Gordon Ramsay: warm the pan before adding the oil. And to help remove bubbles without losing so much, rap the bowl on the counter a couple of times.

Oh ACK on the egg custard! I make mine in a glass bowl in my little rice steamer.... Asian silken eggs. Beat equal amount eggs and water. Steam in rice steamer until holds it's shape. It is served with a small amt of toasted sesame oil, a tiny bit of soy, and some fresh chopped green onions. Very tasty. Very delicate.

I would abandon the chop sticks and use a set of wooden tongs. That would free one hand for the twisting. I think the temp is what you need to adjust for custard.

This one was hilarious! Thanks for trying these for us. I had seen the first egg trick before and actually bought chopsticks to do it. I didn't do it perfectly either. It takes practice, but it's not spinning the pan that does it, it's turning the chopsticks. it is a skill to master. As you said, they're eggs. Nothing magical happens. But, the look is cool.

One of my favorite videos! I laughed so hard. But I will give the blueberry pastry one a try (once my broken door air fryer gets fixed). Joe Duff has a similar but savory air fryer recipe which I've made several times; a Toad-in-a-Hole type version. You should try it; endless variations of cheese and herbs possible. I place a slice of deli cheese on top of the raw egg to protect the yolk instead of his glass jar. I use a parchment liner which makes it easy to transfer bread in and out of fryer with no cleanup. Title of the video: "This 5 minute Air Fryer Breakfast Recipe is Helping Me Lose Weight". Love you guys🥰

Love your videos-I just found you and am now binge watching all your videos. I make an egg custard on the stove in a pan with a trivet in the bottom. I use 6 eggs and then an equal amount of liquid-sometimes I make it sweet (in fact most of the time I make it sweet) by adding some allulose and flavoring like lemon or vanilla extract. Put the bowl on the trivet in the pan with about 1/2 inch of water in the bottom. Cover the pan but leave the lid ajar to let the steam escape. simmer for 30 minutes. No need to remove the bubbles from the top. Watch beef and butter gal for the recipe. It is really good! You guys had me rolling on the floor with this video!
