LEARN HOW TO MAKE A VEGAN SPICY CHINESE BRAISED EGGPLANT RECIPE
LAY HO MA!! This eggplant dish is incredibly packed with flavour and reminds me of my childhood. I used to eat this often at the dinner table with a bowl of white fluffy rice. Join me in this episode and learn how to make a vegan Chinese spicy braised eggplant recipe with ease! Let's begin.
Ingredients:
1 large Italian eggplant (or ideally 2 skinny Chinese eggplants)
2 large pieces garlic
3 sticks green onion
2 tbsp cane sugar
1 tbsp rice vinegar
3 tbsp soy sauce
1 tbsp Korean pepper powder (gochugaru)
drizzle of olive oil
1/2 cup water
1 tbsp roasted peanuts
Directions:
1. Slice the eggplant(s) into wedges. Finely chop the garlic. Chop the green onion (keep some of the green part for garnish)
2. Prep the sauce by combining the cane sugar, rice vinegar, soy sauce, and Korean pepper powder
3. Heat up a sauté pan on medium high heat. Drizzle with olive oil
4. Add the eggplant when the pan just starts to smoke. Sear the eggplant as best you can just to get some colour
5. Add the garlic and sauté for 5min, then add the green onion
6. Add the sauce plus the water. Deglaze the pan, then cover and cook on medium for 5min
7. Crush the peanuts in a pestle and mortar
8. Plate the eggplant when cooked. Garnish with the green onion that was set aside and the crushed peanuts

I made this last night and really liked it. I substituted the korean pepper powder with kashmiri mirch powder and added a little more vinegar to my taste. What I really appreciate about your channel is that you very to the point and unlike other channels there is no half an hour droning before getting to the recipe. If the dish takes 5-10 min then your video is also only that long.

Hi, Wil. For those wishing to make this with less oil and also a bit faster, I’ve discovered that steaming the sliced eggplant for a quick minute before sautéing works fantastic. The amount of oil used is cut by 2/3rds. We steam it on a plate in our Instant Pot, set it for 1 minute manually and take it out before the timer even starts working (when you see the 1 come up, do a quick release). Then drain and proceed with the sauté steps. Hope that helps someone out there. 🇨🇦🇺🇸🙌

We can't absorb the nutrients in some foods without the help of a little (wisely chosen) fat. For a multi-serving, this isn't over the top at all. 😊

I do this with all eggplant as I find it makes it so tender, but with Chinese eggplant, I don’t think it’s necessary.

Most people have only had eggplant parmesan which doesn’t do it justice. Way better with Asian spices or in Greek moussaka.

I have made this dish a number of times as a side dish and loved it. I decided to change it into a main dish by increasing the amount of sauce and adding mushrooms and shredded cabbage at the same time as I added the green onions. Just before serving I added udon noodles to the mixture and coated them with the sauce. Tasted amazing. Thanks for the recipes Will. This and your garlic chilli noodles are my go to quick meals

How do you use tofu in your eggplant recipe, Michael? I love eggplant and tofu so that sounds fantastic!

@@valeriekurtz5620 I don´t really put a lot of effort into adding the tofu. most of the times I cut it into about fork/stick sized pieces, give them some color in an extra pan with oil and add them to the eggplant before I pour in the sauce. so the tofu marinades like the eggplant in it. I do it mainly to give the dish some protein

Thanks for the coconut sugar idea! I used 1/2 coconut sugar and 1/2 raw cane sugar. Otherwise followed recipe exactly. SO good. I’m glad I doubled it since I have a ton of Chinese eggplant right now.

I made this last . The recipe was super easy to follow and it turn out amazing! I had a Chinese Pepper powder that was a lot finer than the one you used but ther flavor and heat were really great . I'm the only Vegan in my household so I do most of my own cooking. Your recipes are exactly what i have been looking for. i can eat more things than just a plate of roasted veggies. Eggplant isn’t my favourite vegetable, but I did have some mushrooms that needed to be used up. Otherwise I followed the recipe ( I did omit the oil). Wow. It was outstanding. I think it would be good with red peppers and carrots or perhaps cucumber on their own. My husband said it was definitely restaurant quality! Thank you so much for this great recipe.

Do you think zucchini would work in place of eggplant? I have tons of zucchini I need to use . I just recently bought an eggplant to try but accidentally left it in the hot car for a few days as it rolled under my seat and of course found it a bit too late 😕

I was watching a Chinese drama when the girl said she would make braised eggplant. Me, being an eggplant lover never heard of braised eggplant. So I stopped dead on my tracks and came to KZbin to see if I can find a recipe and yours was the first. Wow this looks delicious. We are camping and I wanted to try this recipe. Sooooo good. I didnt have rice vinegar, green onions or the Korean powder. I used white wine vinegar, purple onions and my triple chili powder. My powder is hatch, jalapeno and purple chilis. We loved it!!! Thank you so much for another lovely recipe.

Nice. I made this tonight with eggplant wedges I'd frozen in the fall. Added chunks of yellow bell pepper too and reduced sugar a bit. Delicious over brown short grain rice.

I just made this and it was delicious! I'm having dental work done this month and need to avoid nuts so instead of chopped peanuts I added a couple knobs of homemade peanut butter to the sauce and it worked beautifully, can't wait until I can make it again and use the peanuts for texture.

Ok, I made this today and it was beyond good! I even made it with Chinese eggplants and OMG, they're so much better than the other kind, I only want to eat Chinese eggplants from now on. I'll be making this again tomorrow.

Excellent eggplant 🍆, but it's the sauce that's life-altering. I make it by the jar full now and use it for tofu marinade, salad dressing, noodle sauce, and anything else that needs a sweet spicy kick. Thanks Wil!

I tried your recipe for real, it’s delicious its spicy sweet sour and salty. This recipe is a keeper whenever I crave for eggplant and Im not even vegetarian.

Made this last night with Chinese eggplant and it was delicious. I love eggplant so I knew this was going to be good but was surprised at how balanced the flavors are. The only change was that I substituted Korean chilli flakes with Aleppo pepper flakes and hot red pepper flakes. I plan to purchase Korea chilli flakes and make this again. I used to make something similar with oyster sauce but I prefer this version. Also, I used a cast iron pan which really helps getting some color on the eggplant. Thanks for sharing.

I can never get enough of eggplant. Instead of sugar, I used organic date syrup (which also helps thicken the sauce). So glad any eggplant works for this recipe!

Dear Will, I have been following your channel for a few months now and had been looking forward to make many of your recipes but I finally managed to find gochugaru in a nearby Korean store and made this braised eggplant! Oh my, should I say that this is the tastiest eggplant dish that I have ever had!! So flavourful with minimal ingredients!! As others have already eluded to your call demeanour just infuses confidence and “can do” attitude. I’m in Canada too (Toronto) and how I wish I could meet you sometime and thank you for such simple yet delicious vegan recipes (I’m not a vegan though because I love my “ghee” and morning milk tea being an Indian 😌) but I’m trying to minimize the use of other milk products for sure!
