If you can find them try using an orange coloured beet and a red one, or even yellow & orange beet to get a peachier colour which would look more like salmon. I think that’s what I’m going to try, if I can find the different coloured beets.

I don’t buy red beets any longer; I got tired of the mess. I don’t know if I’m missing out on a few nutrients by avoiding the red color, but it’s worth it to me to not have stains everywhere. And I think golden beets have a sweeter flavor, but it might just be my imagination.

This is super similar to the tofu salmon recipe i use, so i KNOW it's gotta taste delicious! I use beet juice (or beet powder if i have some) for the color, I've even used red food dye in a pinch, lol. I also add a bit of vegan mayo to the marinade, and i cook the tofu salmon with some dijon mustard and it is DIVINE!

Violife is one of my favorite vegan cheese brands. Although Miyokos makes exceptional cultured vegan cheeses they are expensive and only get them as a treat. But Violefe are in that intermediate price range (presumably because they aren't cultured) and their parmesan, feta and cream cheese are really good. Was never a fan of cheese slices, but their range is better than the competition....and, as a Greek company, I gather they do Halloumi, the cheese I miss most, but haven't been able to source it.

I've had success slicing rice paper to size, and inserting the slices between the tofu at a 45⁰ angle. I went a little easier on the beets, and added dulce crystals in addition to the nori to punch up the ocean flavor.

The flavoring idea for this sounds absolutely brilliant! I just wouldn't bother with the beetroot tbh as it is just a fantastic way to make tofu (which I like anyways). But the cuts are for sure essential as they allow the marinade to penetrate much deeper too! Also, the plating was truly spectacular - great job!

This is exciting. The plate looks amazing. The last thing I ate that was not plant based, was salmon so I will be making this for sure. Also I used to love gefilte fish with beet horseradish so when Monica mentioned this it got the wheels turning. Perhaps you could figure out a gefilte fish recipe. Thanks for the awesome tutorial!

Nina and Michael Shandler have a recipe for making clam chowder from wheat gluten. Probably I guess resulting in something similar to Chai Pow Yu (mock abalone) that the Cantonese do. Do you think this could serve as a basis for other types of seafood? I'd really like to find a way to do vegan lobsters or crabs for example. Or would it be more reasonable to use a gluten chicken recipe instead??

I don’t know; it might be a case of looks over taste here. I just don’t think I’d like those flavors combined together, nor would I like that texture. But I have not tried it, so I could be wrong. I’ve cooked for decades, though, and over time and with experience, you do get a sense of what you like and what will work for you. If you like it, I think that’s awesome and I applaud you for not contributing to the overfishing problem. The air fryer looks amazing and I would love to own one, but I do not have a large kitchen. I have limited lower cabinet storage space and even more limited counter space, so I have no place to keep an appliance with such a large footprint. It’s too bad.

I made this because I was interested in how it tastes. I cannot in good faith say it tastes like salmon. It still tastes pretty good but in no way could I describe it as a fish-like taste in the slightest. I can’t even say it looks like realistic salmon either but it was an interesting recipe.

Really? There is more zinc in cashews than there is in beef per weight... Zinc sources. Chickpeas, tofu, oats, coco powder, lentils, hemp seeds, pumpkin seeds..... Lots of very good sources of zinc.
