We have a small lemon tree in the garden and after our trip down to Durban we came back to several ripe or near ripe lemons on the tree. So I decided to make some of them into a tangy spicy lemon pickle and in this way we can enjoy them through the winter months to come!
Ingredients
10 almost ripe lemons
For soaking overnight
1 tsp sugar
1 tsp salt
2 cups vinegar
1 tbs pickle masala
2 tbs pure chillie powder
4 cloves garlic, finely chopped
1 cup oil - additional to top up after setting
Can be served as a side to many curries and biryanis.
