Making Flavorful Leche Flan
4 tbsp brown sugar
10 large egg yolks
1 can evaporated milk
1 can condensed milk
1/2 tsp lemon juice
1/4 tsp salt
1/2 tsp vanilla extract
1. First prepare the llaneras by placing 1 tbsp of brown sugar per llanera (ensuring sugar is spread out well to the sides), then place on stove top on very low heat. This recipe requires 4 llaneras.
2. After a few minutes the sugar will start to melt. Keep the low heat and move around to make sure even heating to caramelize the sugar until liquidy enough to spread the whole floor of the llanera. Set aside to cool down and re-crystalize.
3. In a large deep bowl, gently separate the yolks from the whites. Gently pierce the yolks, then stir a few times gently until slightly pasty in consistency. Gentle stirring will reduce air bubbles that will ruin the consistency of the flan.
4. Pour in the condensed milk and evaporated milk. Gently stir to mix the ingredients.
5. Add the salt, vanilla extract, and lemon juice. Stir gently again until well mixed. No air bubbles should form.
6. With a fine mesh strainer, pour the mixture into a new bowl to remove any clumps. Discard and clean the strainer then pour back into the original bowl. If there are still noticeable clumps, you may pour it back again into the other bowl to produce a very smooth mixture.
7. Gently pour and evenly distribute the mixture into the 4 llaneras, pouring from a low position to reduce the formation of air bubbles. You may use a small strainer to further reduce air bubbles from forming.
8. Wrap each llanera with foil, then place in a steamer. The water should have already started to boil but reduce to a low simmer, then leave for 1 hour. Avoid high heat as this will cause the flan to harden.
9. At around the 45 minute mark, you can use the toothpick test to check if the flan has cooked. Open the foil and insert a dry and clean toothpick less than an inch into the flan then gently remove. If no mixture sticks to the toothpick, then it is done.
10. Once cooked, let cool and place in the refrigerator for at least 2 hours.
11. To serve, place your serving plate onto the llanera upside down, then quickly but carefully flip the plate, then gently lift the llanera up.
