Thank you Matthew for this video on making Gurma. I've been waiting for this recipe. My Mum used to make this and other fabulous Guyanese dishes but alas due to illness can no longer use the stove. This is my favourite Jhandi house food. I've watched all of your videos and I'm learning a lot from you. Thank you.

Thanks for making Guruma! Is anise seed.... is that fennel seed .... my mom I think added sowp....is'nt sowp fennel seed? Not sure....are they different spices ? But I know for sure she put a spice in Guyanese called sowp. Also how do you cut the mango... you chop in pieces ...then get rid of the membrane in the mango? With some puri... in heaven!
@matthewsguyanesecooking4601
@matthewsguyanesecooking4601 5 жыл бұрын
Anise seed is different from fennel seeds. Anise seeds come from the star anise pods. I've heard of sowp but I believe it's a different spice. I'm not too familiar with that one.
@matthewsguyanesecooking4601
@matthewsguyanesecooking4601 5 жыл бұрын
Yes I chop the pieces first and then peel and then dig out the membrane to prevent anyone from choking on it.

Matthew I watch this video a few times as when I do make it I want it to turn out great like yours. So I bought the anise seed from West Indian store... I guess I roast it and grind in a coffee mill to get like yours. Also I live in Toronto Canada and almost rripe mangoes are not always readily available during Diwali when I would make this can I buy it when in season and peel and chop etc and freeze to use when I need it? It's just that it's not always available ? Also I was at a pooja and I was watching the men and ladies cooking and they didn't have ripe mangoes while making guruma and I think they boiled the green mango or something like that ... really interesting the way they improvised😀 Anyways thanks for sharing this recepie. I think they use to use saunf in it( fennel seed)....but I will go with your recepie as it looks the same. Thanks again
@matthewsguyanesecooking4601
@matthewsguyanesecooking4601 5 жыл бұрын
I hope it comes out great. Freezing the mango is a great idea. So mine were a bit more ripe than I wanted them to be (so I didnt boil or steam them). But if I had to use green mango or a mango that was less ripe then I'd have to boil it to soften it a bit (just like they did at the puja you referred to). It's pretty cool to learn about how people make things differently. I've never heard of using fennel seeds but it would work because fennel seeds and anise seeds both have a licorice flavor to them. Thanks for watching and leaving your comments.
