Hello Sweet Mama! I have a learn a new receipe Koikutta today and also learn the name of a cake Woorandai which I have been enjoying since childhood especially during Divali time but in Mauritius we simply call it ( Gato Zemberique) which mean Green dhall fritters. These two delicacies will go perfectly with a steaming hot masala chaii! Thanks to you and Hazel and have a blessed Sunday.

Wow, I just love to watch you girls make these lovely recipes . We make a similar version in India, but after we steam it, we again run it through a chakli maker to basically turn it into noodles . Then those are added to a sweet thin custard made of coconut milk and treacle or jaggery. Try adding the koikuttas to the sweetened caramalized coconut milk . It tastes simply delish.

What you guys call as woorundas are called as Sugiyan or Suyyam in Tamil back in India, we use jaggery instead of sugar for the filling.

It looks so easy to make. I tried it today .I was abit disappointed it came out hard and dry.any idea why this happened

Hi Jayshree, if you reduced the butter or if you didn't make the dough soft enough, then it will dry up when steaming. Use my recipe quantities and try again. Make sure the pot is covered properly when steaming and have enough water in the pot to build up the steam. Let us know when you try it again. All the best.

Will depend on the size of your pot. You want to keep the water boiling and if needs be check that there is still water in the pot as you are steaming the koikutta to make sure it doesn't boil dry. We started with approximately 2lt and didn't have to top up but the water level was low at the end of the steam so Hazel added more water before the second batch. Just make sure its not touching the bottom of the cloth as well.

Hi. Here in South Africa cake flour is our general purpose flour that we use. It is also branded as Cake Wheat Flour and can be a little bit finer than all purpose flours found in other countries.

@@karminipillay7742 that is strange because when you steam the kolkutta the sugar will dissolve. Even when you add the condensed milk, the sugar will dissolve. I am very surprised that your sugar granules didn't dissolve. Maybe try the castor sugar option and check the outcome.

Thanks for the correction, we take note. How we know it to be called may be a South African thing that got lost in translation over the years. However searching kozhukattai returns a steam stuffed dumpling which isn't exactly what we made either.
